Katie Lee’s Peach Cobbler

Cooking shows make up at least 60% of our DVR.

One of my absolute favorite shows is The Kitchen on Food Network. I’ve grown especially fond of Katie Lee. She has super shiny hair and a black pug, so what’s not to like, really?

A few weeks ago (actually, it may have been months ago by this time?), Katie shared her super simple recipe for peach cobbler.

I suppose we’re at the end of peach season (are we? I’m not up on that kind of stuff…), but this recipe can be easily adapted to use whatever kind of fruit is in season. I can’t wait to try it with apples over the next few weeks!

Another bonus—I bet you’ve got almost every ingredient you need in your pantry!

Katie Lee’s Peach Cobbler

  • 4 cups sliced, peeled peaches (4-5 peaches)
  • 1 c. all purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. milk
  • 1/2 stick melted butter
  • 1 tbsp. cornstarch
  • 1/2 c. boiling water
  • Ice cream or whipped cream for topping (optional)


  • Preheat oven to 325*.
  • Place the peaches in a 9×9 baking dish.
  • Mix together the flour, 3/4 c. sugar, baking powder, and 1/2 tsp. salt. Add the milk and melted butter and mix well. Pour mixture over the peaches.
  • Mix the remaining sugar and salt with the cornstarch. Sprinkle the mixture over the batter.
  • Evenly pour the boiling water over the entire dish.
  • Bake until golden brown and bubbling (about 50 minutes, mine took a bit longer).

See—so simple, right?

This required very little hands-on time and made for a warm, delicious dessert!

WIAW – Vacation Day

I had to make some serious effort to get this post done, but I’m here! I took a vacation day on Monday, and I made sure to photograph my eats in anticipation of writing a What I Ate Wednesday post, so despite feeling swamped all day, I’m writing this post!

It has been way too long since I joined Jenn and other bloggers in the WIAW link-up!




Even though I took the day off, I was still up and in the kitchen by 7:00AM! I had a bowl of Chocolate Chex (very yummy!), and—of course—a cup of coffee.

I love cereal (I’ve been on a Chex kick lately), but I usually don’t eat it as a work day breakfast because it doesn’t keep me full for very long. Since I was at home, I knew I’d have plenty of snack options and opportunities, so I went for it.

AM Snack


I had to bake cupcakes for an event at work on Tuesday, so of course I needed to sample one myself. You can’t just go around feeding people things you haven’t taste-tested! 😉



I didn’t feel like having my same ol’ pb & j, but there also weren’t too many lunch options to select from. I lightly toasted two slices of Udi’s gluten-free bread, and topped them with goat cheese, tomato, and salt and pepper. I also had a glass of water—I am horrible at drinking water when I’m not at work.

Have you guys tried these KIND bars yet? Chris and I love them! The vanilla blueberry and chocolate peanut butter are my favorites. I downed one of these before heading off to BodyPump.



New recipe success! I made Crock Pot Buffalo Chicken Lettuce Wraps from SkinnyTaste and they were delicious! I topped my chicken with some shredded carrots, goat cheese, and a bit of ranch dressing.



I made peach cobbler on Sunday, so I had a leftover piece for dessert while watching The Bachelorette (I’m happy she picked Josh!).

And there you have it! It was so nice to have a day off, and it definitely made Tuesday a little brutal (actually, things were still feeling quite brutal today, too! lol).

Sunday Snapshots – 6/29

Hey guys! I hope everyone had a great weekend! If it wasn’t so great, or it was super busy, just think—only four more days to go until the next chance at some relaxation! :-)

I had a pretty low-key weekend, but still managed to snap a few pics to share.


Chris and I picked up take-out from a local Italian place on Friday. Stewie loves to go for rides in the car (what dog doesn’t?) so we brought him along for the pick-up! That is the face of pure pug happiness.


This place happens to offer what I consider to be one of the best cannolis I’ve ever had; I always have to order one! This was my dessert, which followed a dinner of gnocchi in marinara sauce.


I picked up a new-to-me drink at Starbucks after the gym on Saturday morning—Shaken Iced Blackberry Mojito Tea Lemonade. The name is a bit of a mouthful, but it tasted great and was very refreshing!



Chris and I tried a new restaurant for dinner last night—Shirley’s Cafe and Tequila Bar—after I had heard a few positive reviews. It certainly did not disappoint! (Local readers, you should definitely check this place out!)

I started with a pineapple-infused margarita (so good!), and ordered a shrimp quesadilla for my entree. The quesadilla was perfectly crispy, yet filled with just the right amount of melty cheese. Both of the dipping sauces were great too! We can’t wait to go back and try some of their other offerings.

I didn’t take any pictures today, but the day consisted of the gym, grocery shopping, laundry, and some other random to do’s. Now I’m about ready for dinner, so I’m off to get Chris to fire up the grill! :-)

Friday Favorites: 6/27

Happy Friday! I always look forward to the weekends, but even more so during the summer months when the weather is warm and the sun is shining!

This week, I figured I’d join Heather’s link-up, and share some recent favorites.


Favorite #1 – Iced tea!

Favorite #2 – The return of Big Brother!

Watching Big Brother is one of my favorite summer traditions. We are only two episodes in so far, so I can’t declare any favorites quite yet. I’m just happy one of my favorite shows has made a return.

Favorite #3 – Reese’s Oreos!


You guys… these. are. amazing. I almost wish I never tried them, because now I catch myself randomly thinking about them throughout the day (okay, maybe that is a little bit of an exaggeration, but they are really good!). They are advertised as a limited-time-only product, so I’d try to get your hands on them soon.

Favorite #4 – Chris making dinner!


Chris and I watch a lot of cooking shows. We love the low-budget shows on PBS (America’s Test Kitchen, anyone?), which I think makes us about 80 years old. However, we also love to watch Food Network. Chris was watching the Sandwich King a few weeks ago, and was inspired to try the featured recipe—fish dogs.

I’m never one to complain when Chris wants to take over a night in the kitchen; I love getting a little break from time to time.

Favorite #5 – Pug snuggles!


Stewie tripped going up the stairs about a week ago, resulting in him having a bit of a bum leg for a few days. He has been moping around and extra snuggly this week. He has also been “requesting” more belly rubs than usual—he knows how to milk us for sympathy, that’s for sure!

Favorite #6 – Holidays!

I am already looking forward to having next Friday off for the 4th of July! Hooray for holidays, good food, and days off!

WIAW – Weekend Eats

We made it to mid-week—woohoo!

Does anyone have exciting plans they are looking forward to this weekend? Chris and I are going to HersheyPark for his company’s picnic. I’m not usually a big amusement park person (unless we’re talking Disney!), mostly because I don’t love rollercoasters. However, for some reason, I’m looking forward to Saturday. I always have a lot weighing on my mind during the work week (hopefully I can elaborate on this at some point), so the weekends are always a welcome reprieve. Anyway, I guess the point of all that rambling was to say I’m excited to go to Hershey on Saturday; I’m even going to try to be brave and ride some coasters!

For this week’s What I Ate Wednesday post, I photographed what I ate on Sunday. My Monday-Friday eats are usually the same from day to day and week to week. Even though I still love pb and j’s on the weekend for a quick lunch, my breakfasts and dinners do vary slightly.

My pre-gym breakfast on Sunday was a bowl of Chex (and coffee, of course!).


I like Chex because it’s gluten-free (gf foods do tend to help me avoid stomach issues!), and the cinnamon and vanilla flavors are actually quite delicious. On Sunday, I had a bowl of vanilla Chex + vanilla almond milk—a great combo!

I didn’t end up photographing my lunch because I reverted to my classic pb and j.

After lunch, I ended up snacking on some watermelon.


We picked up half a watermelon at the store this week and I’m glad we did—it is super sweet and refreshing!

I also ended up eating an Outshine popsicle before dinner because I was getting hungry and needed a little something.

The recipe I followed for dinner came from one of my favorite sites—Normal Cooking.


I had actually made this (Crockpot Angel Chicken) once before, and remembered it being super rich and delicious, so I figured it was time to bring it back! Even though I love crockpot recipes during the week, the advantage to using them on a weekend is that I can be sure the meat doesn’t get overcooked. Both Chris and I gobbled up our portions and sopped up any extra sauce with a dinner roll.

Of course I never skip dessert, and not long after dinner I dug into a serving of Oikos Greek frozen yogurt.


I topped about ¼ of the pint with chocolate chips—delicious!


What is your favorite summer fruit? I think I’m going to go with watermelon this year.

Have you ever been to HersheyPark? What is your favorite ride? I’ve been so many times since we’re only about an hour and a half away. I like really lame rides, like the swings! LOL!

Sunday Snapshots – 6/8

Hey everyone! How was your weekend? Mine was pretty good, and today is actually dragging, which is a good thing. After getting this post published and cooking dinner, I’m hoping to spend the rest of my evening relaxing with a book and maybe an episode or two of 16 and Pregnant (I love my trashy TV!).

On Friday evening, my mom and I went and got some froyo.


I usually tend to pack my cup with several flavors + lots of toppings. It’s just so hard for me to resist the brownie bites and chunks of cookie dough available from the toppings bar.

On Friday, however, I kept things simple with just a little bit each of espresso and vanilla yogurt. I topped my yogurt with strawberries, chocolate crunchies, and rainbow sprinkles. I think I actually liked the yogurt better without all of the extra stuff on top!

This weekend, Chris and I were dog-sitting his parents’ lab, Chance.


As you can see, he made himself right at home on our (new) furniture. I actually just finished taking off the blankets and vacuuming everything! Even though Stewie sheds, it’s not too terrible. Chance, on the other hand, left behind enough fur to build another dog. He did look pretty comfortable all weekend though, so that’s good!

Last night, Chris and I got our grocery shopping done for the week (what all the cool kids do on a Saturday night), then we picked up a BBQ chicken pizza for dinner. We usually have pizza every weekend, but we realized we hadn’t had it in a while, so it was tasting especially good last night.

We both had a Coors Light Summer Brew with dinner.


I’m not really a big beer drinker, but this is good and pretty refreshing. I also like that the cans are small—just 10 oz.—which is the perfect amount for me.

In addition to a little bit of cleaning, yard work, and laundry, I also managed to squeeze in two workouts this weekend.

As we go into a new week, I think I am going to begin a new approach to blogging. To put it bluntly, I am just getting tired of having blogging be one of my “to do’s” every day. From here on out, I’m going to plan to check in and post only when I’ve truly got something to share—a new recipe, exciting news, a general life update, a product/service review, etc. (I’ve been taking pictures today in preparation for a What I Ate Wednesday post later this week, so you won’t have to miss me too long!)

Anyway, I’m going to try it out and see how it goes. The last thing anyone needs in life is additional, unnecessary stress, and sometimes that’s what blogging can feel like!

WIAW – A Day Off

Happy What I Ate Wednesday, friends!

Since Monday was a day off of work, I did my best to photograph my eats so I could link up with Jenn and the rest of the WIAW participants.


Remember when I said I was trying not to eat so much junk food after not feeling well on Sunday? Well, by the end of the day, that was out the window!



I started my day with a bowl of Cinnamon Chex with unsweetened vanilla almond milk and, of course, a cup of coffee.

After breakfast, I headed to spin followed by a quick stop at Target to pick up a few things I had forgotten to get while doing my shopping for the week.

AM “Snack”


I picked up an iced skinny vanilla macchiato while I was running errands.



My lunch was pretty similar to what I eat on work days—peanut butter and jelly on Udi’s gluten-free bread. I also had a serving of pretzels with some guacamole for dipping.

I made these black bean brownies after spin class, so I had to try one after lunch. I actually had two about this size, then another one later in the day! So in case you couldn’t guess by my three servings, yes, they are good!



Per my meal plan, I made these zucchini, walnut and feta cakes from Cooking Light. I was pretty impressed by the fact that my finished product looked similar to the picture with the recipe!

These were easy to make, but prepping the ingredients did take a bit of work. Try this recipe, but save it for a night when you aren’t in a rush.



I tried so hard to fight it, but after dinner I was overcome by the urge to get an Oreo cookie Blizzard! It is officially the time of year when I become absolutely obsessed with ice cream. (The fact that I live about 3 minutes away from a Dairy Queen is just trouble.)

I hope your first day back after the long weekend was a good one! I love those extra days off, but then the subsequent work days can kind of drag, you know? Hopefully that isn’t the case this week!

WIAW: Old and New Favorites

Happy Wednesday!

Does this week feel like it’s draaaggging for anyone else?! I have been battling allergies while feeling completely exhausted all week… yuck!

I had planned to go to BodyPump tonight, but when I really thought about it, I just wasn’t feeling it. I went on Monday, and I upped my weights for many of the tracks. Well yesterday my back was killing me. I could feel the knots all day—talk about uncomfortable. Thankfully, Chris came to my rescue last night and gave me a quick back massage where I was hurting. I’m still feeling kind of achy, so I used that as my excuse to skip tonight’s workout. Yes, I know it’s an excuse… oh well.

Anyway, I’m joining the What I Ate Wednesday party this week—hosted by Jenn—and sharing a handful of my new favorites as of late.




Old – Coffee and overnight oats

New – Trop50 juice

I like juice, but I rarely drink it because it can be relatively high in calories and sugar (and we know I get enough calories and sugar throughout my day, don’t we?!). I had a coupon for this Trop50 variety, and I’m so glad I tried it. I’ve definitely be craving something cold in the mornings now that it is getting a little warmer.



Old – Peanut butter and jelly with something crunchy on the side (TJ’s everything crackers!)

*If you’re wondering why my sandwich looks a little funky, it’s because I cut the crust off. I use Udi’s gluten-free bread to make my sandwiches, and while I really like the bread, I find the crust to be kind of hard and dry.

New – Oikos Greek yogurt

You guys, I love this stuff. I used to be 100% faithful to Chobani, but I gotta say that the taste and texture of Oikos is of a higher caliber!



Old – Coke Zero

New – Hershey’s Special Dark with Almonds

Healthy snacking at its finest! 😉 I kid!

I mentioned how I’ve been tired all week, and I found myself needing a caffeine boost on Monday afternoon. I tried really hard not to resort to soda, but I just couldn’t ignore my craving on this particular day.

As for the Hershey’s Special Dark nuggets… well, they’re delicious!



Old – Whole wheat pasta

New – Cooked Perfect gluten-free meatballs

Chris and I both loved the gluten-free version of our favorite store bought meatballs. We both said they’re even better than the original!



Old – Animal crackers

New – Cookie & Cocoa Swirl

Do I really need an explanation here? Animal crackers on their own are delicious, but this Cookie & Cocoa swirl brings them to another level. It takes everything I’ve got not to eat this stuff by the spoonful.
