Meal Plan: 3/11 – 3/15 (+ a Giveaway Winner!)

Hello, hello!
How was your weekend? Mine was nice, but it went by too quickly… as always. No matter how determined I am to get 100% caught up on school stuff/grading, it never seems to happen.
As we do every Sunday around here, let’s take a look at what’s on the menu for the week ahead:
This week, I meal planned with the help of my “Looks Yummy” Pinterest board.
Monday – Slow Cooker Chicken Caesar Sandwiches from Chef-in-Training
I don’t really have a “planned” side dish for these sandwiches. Maybe a handful of chips, or a small side salad? I’ll have to dig around the fridge/freezer/pantry and see what I can scrounge up.
Tuesday – Crockpot Beef Tips
All you’ve got to do for this recipe is combine stew meat, 1 small can of mushrooms, 1 packet of brown gravy mix, 1 packet of onion soup mix, and 1 can cream of mushroom soup. It cooks on low in the slow cooker all day and then dinner is served! I plan on making brown rice and green beans to go with this.
Wednesday – Balsamic Pork Tenderloin Chops from Stylish, Stealthy, and Healthy
I knew this was going to be on my meal plan for this week ever since Jess posted about it! Sadly, I couldn’t find the right size tenderloin at the grocery store, so I decided I’m going to apply the same seasonings to pork chops instead! I’m going to have leftover rice/green beans from Tuesday’s dinner with this meal (we’ve always got plenty and it usually goes to waste… not this week!).
Thursday/Friday
Thursday, I plan to just pick up Subway. As you can see, Chris and I are going to Baltimore on Friday to visit with his sister and brother-in-law, so I’ll probably be packing Thursday night. We always have the best food when we visit his sister, so I’m looking forward to our overnight trip!

Sounds like you have a good week of meals planned! I have a new crock pot recipe in cooking now and haven’t thought through the rest of the week. Whenever I make green beans or roast broccoli I always eat through the leftovers as I’m making my breakfast the next day.

Loving your meal plan for the week. I made banana pancakes this morning which was a new recipe. Wanting to try something new with tofu but haven’t actually looked at recipes yet.

Your meal plan looks great! I really need to start making some dishes off of my Pinterest boards. I pin way too much and make too little, unless they are sweets of course!

You really cannot beat Subway!! It is definitely one of my favorite “fast food” restaurants to go to since I can actually feel good about eating there!
