WIAW – Week 40

Hello everyone and happy halfway through the week!
I haven’t participated in What I Ate Wednesday in a few weeks, so I figured I’d jump back on the bandwagon! Thanks to Jenn for hosting! (Oh, and these are actually Tuesday’s eats.)

Breakfast – Overnight oats + coffee
So even though I haven’t participated in WIAW lately, my breakfasts haven’t changed much!
My oatmeal included:
- About 1/2 c. oats (I don’t measure anymore!)
- About 1/2 c. skim milk
- 2 heaping tbsp. plain Greek yogurt
- NuNaturals vanilla Stevia
In the morning I added peanut butter, a few mini chocolate chips, and a drizzle of honey. Gimme the sugar.
Lunch – Shrimp with brown rice, banana Chobani, yogurt-covered raisins
I made this for dinner Monday night, so I packed up some leftovers for Tuesday’s lunch. The Cho’ is nothing out of the ordinary; I eat one with lunch every day.
The yogurt-covered raisins were a “splurge” at Target this week. Chris and I debated buying them for a few minutes before ultimately tossing them into our cart. Side note: you can tell you’ve hit a new low of lameness when buying yogurt-covered raisins warrants a discussion.
Surprisingly, I wasn’t really a fan. They were almost too sweet for me, and that’s really saying something! I haven’t gone back for another box since.
PM Snack – Designer Whey protein bar
Recently, I was sent a variety of Designer Whey protein products to sample and so far I haven’t had anything that wasn’t delicious! This is their triple chocolate bar – which was great! – but I think I preferred the peanut butter flavored bar I had on Monday. Seriously, sooo good!
Dinner – Chicken quesadilla + Tostitos Scoops
If you’re wondering if the chips were really necessary in addition to a giant tortilla, the answer is “yes.”
To make these quesadillas, I first prepped some chicken in the crock pot. I combined about 1 lb. of chicken breasts + 1 can low-sodium chicken stock + salt, pepper, and a sprinkle of taco seasoning and let it cook on low for 8 hours. Then, I layered salsa, chicken, and cheese on a tortilla and grilled it on our panini press. Simple and quick!
Dessert – A small bowl of (unpictured) ice cream
Chris determined it was imperative for us to get ice cream at the grocery store on Sunday. And I’d really like to thank him, considering I’ve been the one shoveling it in all week!
How often do you eat ice cream in the winter? Earlier in our relationship, Chris just couldn’t wrap his head around ice cream in the winter (or at least eating it as frequently as I do). I say, give me a blanket and bring it on.





I don’t feel like I eat ice cream at home as much in the winter but I never pass up an opportunity for fro-yo! It doesn’t matter the weather, fro-yo always sounds good to me.

I’m a big ice cream fan no matter how cold it is outside – my family does think I’m crazy at times but it’s oh so good – I agree.. Just bring me a blanket!!
Ice cream 24/7! I actually think I eat more of it during the winter than during the summer (but I just eat a lot of it in general…)!

I’m so happy you posted about cooking the chicken in the crockpot- what an awesome idea! Definitely going to try that next week for Mexican night!
Also…I was just debating whether or not to have some cookie dough ice cream and read your post– I’ll take it as a clear sign to have some!

Uhh…I live in Texas. Ice Cream in the winter is NEVER questioned.

I’m not a huge ice cream eater, but I will eat smoothies all year long. If that means hiding under blankets & wearing sweat clothes while doing so, then so be it

We always eat ice cream more in the summertime. . . but we eat it quite a bit in the winter too – just turn on the fireplace and we are good to go!

Those quesadillas look amazing! I really want to break my crock pot out and use that simple chicken taco recipe that you mentioned above. Sounds awesome!

I haven’t had Tostitos scoop chips in forever. Silly me to forget about them, especially when I LOVE chips and salsa!

I’ve been on a bit of an ice cream kick lately (coffee… yumm!) but I think I need to scale back lol
