Meal Plan: 1/28 – 2/2

Now for a look at this week’s meal plan…
Just like last week, I’ve got “real” dinners planned for Monday, Tuesday, and Wednesday and I really plan to just wing it for the rest of the week.
Monday
This recipe (from Kraft) showed up in my inbox this week, and I’m excited to give it a try. I found frozen, wild-caught haddock at the grocery store today and this will be a new-to-me fish! I plan on serving the fish + mushrooms atop brown rice.
Tuesday
I’m using this recipe (from Food Network) as a guide, but sort of doing my own thing! The ingredient list is kind of long, so I’m omitting a few items that probably won’t affect the taste too much. I bought plain Chobani and avocado to use as toppings (oh, and of course shredded cheese!).
Wednesday
HungryGirl sent out an email this past week with stuffed chicken recipes. It reminded me of an old HG recipe for stuffed chicken cordon bleu. I’ve had this before (my mom used to make it when I lived at home), but I’ve never made it myself. It seems simple enough though! I plan on having a sweet potato and broccoli on the side.

I need to get better about making a dinner meal plan for the week. It seems like every week night is a chaotic rush to decide 1) what we’re having for dinner 2) getting it made in a reasonable time. You inspired me to plan everything out this week

I honestly don’t know what I would do if I didn’t have a set meal plan, at least for a few days of the week! I’m really bad at just coming up with stuff, so it’s a necessity for me!
My week is getting crazy Thursday through Sunday so I definitely just planned for the beginning of the week as well. Kraft always has such good meal ideas!

I secretly LOVE meal planning, ok, maybe it’s not such a secret since I just said it. We’ve got stuffed chicken breast, pasta w/ ground turkey, leftover soup & a few other things this week. The more I can prep ahead of time, the better. Looking forward to seeing how your chili turns out! Looks yum

Hmmm, I might have to try that fish bake! I was just talking the other day about how I NEVER think to make fish and need to start incorporating it into my meal plans more. Thanks for the idea!

I don’t nearly enough either! I get frustrated because my store has mostly farm raised fish and I don’t necessarily want to eat that, but I also don’t want to spend a ton of money! I was happy to see that this was labeled as wild caught!
Slow cooker chicken chili sounds really good! I’m looking forward to leftover sweet potato shepherd pie I made Sunday night. I have been thinking about making some pumpkin turkey chili too!
