Meal Plan: 1/21-1/26

Good morning! :-)

Are you surprised to be hearing from me bright and early? I am usually a nighttime blogger.

A few weeks ago, I posted my meal plan on Instagram and got a few responses asking me to share my plan here on the blog. I loved the idea; I have no clue why it took me so long to follow through with it!

Each week (hopefully Sunday night or Monday morning), I’ll share with you all my meal plan for the week. I’m sure you’ll quickly notice a pattern… Monday-Wednesday, I’ll be cooking; Thursday I’ll usually be picking up something quick; Friday will usually be leftovers (or whatever I can scrounge up); and the weekend is totally up in the air (hence why I omitted Sunday altogether!).

I’ll also link to the recipes (when applicable) so you can cook along with me if something appeals to you!

Meal Plan week of Jan 21

Monday

  • Crock pot mac ‘n’ cheese – This is a new-to-me recipe that my mom e-mailed to me, so unfortunately, I can’t link to it. I do promise to share it if it’s a hit, though!

Tuesday

  • The Best Pot Roast… Ever! – I’ve had this pinned for a while now, and I’m finally going to see if it lives up to the hype. I plan on having green beans and sweet potatoes as side dishes.

Wednesday

  • Garlicky Baked Shrimp – I already plan on making a few substitutions – probably making it a bit less garlicky – but I chose this recipe for its simplicity. Brown rice and corn will be served on the side.

    YUM! Love the meal plan idea! I can’t wait to see how the mac and cheese is! I have already passed on your shrimp and pot roast recpies to my sisters ;) .

    I make a meal plan for the week and to grocery shop and I love it! I find that having all the ingredients on hand without having to run to the store multiple times a week helps me to save money and to become more experimental in the kitchen! :)

      Yes! If I didn’t have everything I needed and had to constantly run to the store, I’d go crazy!

    Yeah crockpot meals. . . can’t wait to hear about them! Are you doing the #crockpot challenge??? I am – but I haven’t made anything in the crockpot yet!!! I like to meal plan, I find that it makes things a lot less stressful during the week if I already know what I am going to make or do for dinner. :)

      I’m not conciously trying to complete the crockpot challenge, but I have a feeling I’m going to anyway! haha I’ve been using it a lot lately!

    I can’t wait for your crock pot mac and cheese! Right now we’ve planned everything out until Friday night (we’re doing baked talapia tonight, spaghetti squash and chicken tomorrow, leftovers on Wed, leftover sweet potato chili on Thursday and Fish Fry on friday!)

    I made a beef and sweet potato stew that was to die for. Recipe’s not posted yet but I promise it’ll be posted this week. There was beef, sweet potato, jalapeno, and beer involved. Amazing! That’s lunch for the week.

    Thanks for posting my Garlicky Baked Shrimp recipe on your meal plan! It is definitely a simple, quick meal, but it’s so good! Hope you enjoy it as much as we did.
