WIAW – Week 38

Evening friends!
Today was a good day. We got a little bit of sleet/freezing rain overnight, so I had a 2-hour delay and got to go into work a bit later. This worked out perfectly since I was in the midst of oversleeping when I got the call! Isn’t oversleeping the worst?! Crisis averted!

For this week’s What I Ate Wednesday, I photographed (most of) Tuesday’s eats. Thanks to Jen for hosting the link-up!
Breakfast – Banana chocolate overnight oats + coffee
Overnight oats were on the backburner for a little while, but they’ve been making a comeback. Why mess with something that I find delicious and keeps me full until lunch time?
In this particular batch…
- 1/2 c. oats
- ~1/3 c. skim milk
- 2 heaping tbsp. vanilla Chobani
- NuNaturals chocolate stevia
Added in the morning…
- Banana slices
- 1 tsp. peanut butter
- Mini semisweet chocolate chips
Delicious!
Lunch – Monday night leftovers (chicken + mashed sweet potatoes), pear Chobani
I forgot to photograph this meal! You can check out a photo/recipe link for the chicken in this post; it has become a quick and easy go-to in our house!
Chris and I finally tracked down the pear and banana Chobani flavors at our local Target this week; we both give each flavor two thumbs up!
Dinner – Cauliflower puree topped with steak and mushrooms
I got the recipe for this meal from Real Simple (the January issue, I think?). Luckily, they’ve also posted it online. Although the prep for this meal was pretty basic, I knew it was going to take me longer than usual to get all of the components together, so I made everything before heading to the gym. I don’t know about the rest of you, but when I come home from the gym I want to do little besides eat, so my plan worked out perfectly!
Dessert – An unpictured bowl of cookie dough ice cream

If you’re a steak eater, how do you like your meat cooked? Whenever we would have steak growing up, it would always be well done (correct me if I’m wrong, mom and dad!). Nowadays, I prefer it medium-rare or medium!






When I was growing up I was the same way and demanded well done meat. Since meeting Joe four years ago my steak preferences are now up to a medium well!
Also, is there anyway to make overnight oats warm?

I do know some people just microwave them for a little bit in the morning! I’ve never tried it since I don’t mind them cold!

haha I don’t mind the pink! Once I had steak with a little pink in it, that totally changed my perception of how I prefer it to be cooked.
Just added cauliflower to my grocery list so I don’t forget that I must make that this week.

I love stewie! I like my steak medium well.. cooked but not burnt! I also love to put a lot of sour cheese on top!

I’ve only found them at Target, not the grocery store!
I’m a medium rare all the way! When we first got married, Scott always liked his meat cooked well-done and then I got him to appreciate a well cooked piece of steak and now he gets his medium rare too!

It’s actually a candy cane bone from Christmas… He took all the good stuff — which made it look like a candy cane — off!
I need to find that banana Chobani! We usually buy a bulk pack at Costco with the old school flavors.
