Thanksgiving Preparations

Hello everyone; happy Thanksgiving eve!

I’m off from work today through next Monday… woohoo! I was able to go to 9:15AM spin class this morning, which is taught by one of my favorite instructors. I really miss being able to attend AM group exercise classes… is it too early to start counting down to summer? ;-)

This afternoon, I got started on a few Thanksgiving preparations. I offered to bring sweet potato casserole to my parents’ house. For some reason, sweet potato casserole isn’t something we usually have, but I really like it, so I decided to go ahead and make it this year. I used this recipe and plan to finish it up tomorrow morning before we head over to my parents’ house.

I also made pumpkin whoopie pies, using a mix from Crate and Barrel.

I wasn’t “assigned” anything to bring to Chris’s parents’ house (we’ll go there later in the evening), but I decided to make these cookies as a contribution to the dessert table. Of course I sampled a few, and I give them two thumbs up! I hope everyone else likes them, too.

After a few hours in the kitchen + time spent cleaning up, I was certainly ready to “veg” on the couch for the rest of the evening… which is exactly what Stewie and I are doing right now! I’m planning on getting up early to run tomorrow for two reasons. 1) I need to do a training run, 2) I ate waaay too much cookie dough tonight and, well, we all know what happens on Thanksgiving!

Sorry this was a picture-free post… I’ll be sure to get plenty of shots of the good stuff tomorrow! :-)
