WIAW – Week 26

Hey everyone!

Thank goodness it’s only a 4-day work week! Even though it’s Wednesday, I feel as tired as I usually do on Friday. Regardless, I have to push through the next two days!

This week’s What I Ate Wednesday post is actually what I ate Monday. Since Monday was a holiday, it was the easiest day to photograph my meals. Surprisingly, even though I was at home (and that’s usually when I do a lot of snacking) I only ate breakfast, lunch, dinner, and dessert – no snacking this particular day!

Ah yes, Monday was when that thing of beauty was born! I actually made it last night as well and wrapped/refrigerated it for breakfast this morning. After a 45-second warm-up in the microwave, it tasted just as fresh-baked as the original.

I spotted these Pepperidge Farm cracker chips for the first time at Target this weekend (I can’t find this specific product on their webpage, so I’m thinking they’re new). I love the “crunch factor” of having chips with lunch, but I’m always looking for healthier options as well. These are fantastic!

I love this dinner and it couldn’t be any easier to prepare. All you have to do for the salmon is coat it with BBQ sauce and sprinkle with scallions! Then I bake it at 350* for about 25 minutes. I buy pre-packaged ready-to-microwave green beans at the store and the brown rice cooks in 90-seconds! The whole dinner probably took 5 minutes to prepare – a winner in my book.

I asked Chris to pick me up a surprise from Dairy Queen when he had to run out for a quick errand. Clearly, I was so into this ice cream that I just barely remembered to snap a picture. I usually get a Blizzard at DQ, but you can’t go wrong with a classic like this!

Alrighty, off to work on some stuff for school + grad class; I’m already feeling the pressure of being back in the swing of things.

      My husband and I used to live 2 blocks from a DQ and get blizzards all the time, and now we make it a road trip and drive the 30 minutes for our special treat! By the way, DQ is offering a “Buy One Oreo Blizzard, Get One for $.99″ until 9/24! :)

    I love DQ and just found out that they are running a buy one get one for 99 cent special on blizzards until the 23rd! And, I heard that they will make the pumpkin pie blizzard too so I have to go find out if that’s true. :)

    Ugh, yes, I can already feel the “swing of things” taking a toll on me, too. I have no sense of normalcy right now and feel like I’m always playing catch up!

    I’ve actually on had Dairy Queen about once or twice. There aren’t any Dairy Queens in my area, so I rarely have it.

    The first place I lived in after college was right across the street from Dairy Queen and I made way too many stops there. I always made it a point to try a different Blizzard each time : ) Butterfinger was one of my favorites!

    Can’t EVER go wrong with vanilla in a dish with sprinkles!! I tell everyone that I swear sprinkles just make ice cream complete, and gives it that “amazing” factor haha.

    Everything is better with sprinkles :) I cannot wait to try that pumpkin oatmeal. We’re moving into our new place this weekend (finally), and it’s bookmarked to be one of the first recipes to make in the new kitchen!

    What a nice and relaxed, FUN day of eats! The oatmeal bake looks genius and I love your lunch. So simple yet satisfying. I ate two PB sandwiches with no crusts each day from elementary school til the day I graduated high school! The chips look good, I love finding new crunchy snack products, I always look for ones with the biggest serving sizes possible ;) and I can’t believe your din took just 5 minutes to prepare! It looks like a restaurant meal! And finally, can’t go wrong with swirly DQ, you just can’t!

      I think there are 24 or 26 chips in a serving so it’s a pretty good portion!

    I love Dairy Queen! Last time I went I had a medium hot fudge sundae, but I often go for a small Reese’s PB Cup Blizzard.
