Two New Dinner Ideas

One is healthy. One is not.

But before we get into that… I had intentions of posting yesterday, but quite honestly I didn’t eat anything exciting enough to warrant a What I Ate Wednesday post & I didn’t do anything exciting enough to warrant a “this is what I did today” post. Plus, I was feeling lazy so I just said “forget it,” & ate some ice cream instead. ;-)

Today, I’m back with two new recipe ideas. Let’s start with the healthy option first.

I always save recipe e-mails in a special folder for easy reference. I get the daily Hungry Girl e-mails & received a recipe for Sweet Apple BBQ Chicken last week.

I love this recipe because it calls for chicken, cut into 1-inch cubes. Whenever I need to cube chicken for a recipe, I buy the boneless, skinless tenderloins because they are usually available at a much better price than chicken breasts. Just a quick, money-saving tip for you all!

This is also a crock-pot recipe, which immediately earns a gold star from me! You basically throw chicken, apples, onions, garlic, & BBQ sauce in the crock-pot & let the most magical of all kitchen appliances do its thing. I served up my bowl of the crock-pot chicken with some sweet potatoes + ketchup for dipping.

Now, onto the unhealthy (everything in moderation, friends!).

Today, I met my friend Sara for lunch at a well-known, local place that I had never been to before — Judy’s on Cherry. I had heard Sara rave about this place as one of her favorites – and been told the same by many other people! – so I was excited to finally give it a try.

I had a hard time deciding between pizza, a salad, or a panini, but ultimately my love for pizza won out.

I ordered the crab with spinach pizzacream cheese, cheddar cheese, romesco drizzle.

Yum.

I ate half at the restaurant, 2 slices around 4:00PM, then the last two slices a few minutes ago. Yes, this pizza was pretty much my sustenance for the day!

I got to thinking how easy this would be to recreate – either as a homemade pizza, or by using the flavor inspirations in another dish. The first thing that came to mind was to incorporate these ingredients into a semi-homemade hot pocket. I’ll do a little experimenting & report back!

Time to do some dishes, eat ice cream while watching Big Brother, & relax. Enjoy the evening!

    I love eggs and after not being able to make them for nearly three weeks, huge omelets have been my favorite dinner choice lately. I had an amazing burger the other night that had a homemade sauce on it–I wish I knew what it was because it was so good!

    Crab on pizza? Hello! I would love that. The least healthy thing I’ve eaten lately is Toppers stix. I’ve been making protein pancakes for breakfast lately (oats, an egg and cottage cheese with berries on top).
