Sunday Dinner

Hey everyone! Another weekend over already? Where is the summer going? We’re quickly approaching back-to-school, but let’s not think about that!
I didn’t get around to blogging yesterday, but nothing too exciting was going on anyhow. I went to 8:00AM spin class, did a little bit of cleaning, went to church, then ate lots of Hawaiian pizza… yum.
This morning I went to BodyPump, followed by a few errands then some breakfast & coupon clipping.
Once Katie posted this Reese’s Peanut Butter Cup Baked Oatmeal recipe the other day, I knew I would be trying it & today was the day!
Any excuse to eat chocolate for breakfast, I’m there!
After getting ready for the day, Chris & I headed out to run a few errands. First on our list was Home Depot, where we picked up an Adirondack table for $9.00! (Similar to this one.) We have yellow Adirondack chairs on our front porch, & I’ve been wanting to get a table to match, but it has been difficult to find one that’s the right height; this was the perfect solution & at a great price! The only thing is, it’s unfinished. Like I said, the chairs are a pale yellow color. Our siding is brown & our shutters are a darker brown. I’m thinking of painting the table a deep blue or deep orange… what do you think?
After Home Depot, we headed to BJ’s to pick up a few bulk essentials (water, toilet paper, granola bars, etc.). When we went into BJ’s, the sun was shining, but as we were ready to walk out the door we noticed that it was pouring.
Enter…
A quick snack later, the rain had subsided enough for us to get to the car.
I got to work preparing dinner pretty soon after we got home. I love making a “big” dinner at least one day of the weekend, since Chris & I don’t get to eat together during the week. Chris wanted to make burgers, so while he manned the grill, I made two side dishes… roasted potatoes (coated with olive oil & salt, then roasted at 350* for 40 minutes, turned every 10 minutes) & a corn salad.
The corn salad was made using corn on the cob, canned diced tomatoes, black beans, onion, & a sprinkle of salt. Everything was delicious!
Dessert was delicious, too – a skillet cookie!
I’ve had a recipe for a skillet cookie pinned for a while, but when I saw Cait made one recently, I knew I had to get on that! So yummy & a different take on the traditional chocolate chip dessert.
Now, it’s time to do some dishes (ugh) then watch a little TV. Enjoy the evening!

Lately, I have had exactly zero desire to cook— especially supper. Ugh, I’m just so pooed out by then- I just want SOMEONE ELSE to make something for me, I’m sick of cooking for myself. I know it will pass; but golly!

If I were 8+ months pregnant, I doubt I’d feel like cooking a big meal either!

I want that skillet cookie! Unfortunately, I have NO ingredients while I’m in NYC for the summer (hell, I barely even have anything edible in the fridge) so I’ll have to wait until I’m back in Baltimore.

It was very yummy! The only thing was, it got kind of “crunchy” today, the day after. Chris & I solved that problem by microwaving it & topping it with some ice cream. Good as new.
So since I can’t bake, I think the skillet cookie might be in my favor. I really should try it.
It was super simple; you can do it!
That skillet cookie looks delicious! I have been meaning to make one, just never have.

I saw the oatmeal recipe too… sounds like a WIN for sure! And while I have never made my own skillet cookie, I had one from a pizza place once… Oh dear lawddd was it fantastic! It was also enjoyed guilt free, as I was younger and didn’t care too much about calories/fat and all of that nonsense. I am hoping to get back to that point one day

I’ve had a similar dessert at Pizzeria Uno; is that where you had it?! Omg, so good! While the one I made was tasty, I don’t think it is quite the same as the restuarant version.
