WIAW – Week 19

11 Jul

Hey everyone! I’m getting around to blogging later than usual tonight. All of a sudden, after dinner, I got very sleepy & ended up napping for a good hour or so. Ah well, but late than never, right?

It’s been a few weeks since my last What I Ate Wednesday post. If you’re interested in seeing other WIAW posts, be sure to check out Peas & Crayons.

BreakfastMuesli + iced coffee

One of my favorite, new breakfasts is muesli. This particular brand (Bob’s Red Mill, available through Swanson for $3.80/bag) is a blend of whole grains, dried fruit, nuts, & seeds. I prepped 1/4 c. before heading off to spin this morning & by the time I got home, it was ready for eatin’. (1/4 c. muesli + about 1/4 c. milk, 1 tsp. chia seeds, 1 tbsp. Greek yogurt) I also added a dollop of peanut butter for some staying power.

LunchBBQ pulled pork sandwich + pineapple Chobani

The BBQ pulled pork was leftover from dinner last night (I made it in the crockpot). I ate it cold on a whole wheat bun & added some extra BBQ sauce.

Pineapple Chobani is one of my favorite flavors. It’s a toss up for me between pineapple & strawberry-banana; the 2% are where it’s at!

DinnerUndone stuffed pepper casserole

I feel like I talk about this recipe a lot, but it’s one that I know by memory & it comes together quickly. I probably make it every few weeks.

I actually planned to try out a new recipe, but the day sort of got away from me & I just didn’t have the patience to be creative in the kitchen this evening.

DessertChocolate chip blondie

I made these for a guest post for a fellow blogger! They turned out rather deliciously, so I’ll be sure to spread the word when the guest post gets published!

Last but not least, it’s time to announce the winner of the $25 spa week gift card, compliments of resource Natural Spring Water.

#11 – Ashley!

Congrats! I’ll be in touch!

Alright, time for some dishes, then I think an early bedtime might be in order. Enjoy what’s left of the evening!

Which do you prefer – brownies or blondies? I’m not one to choose favorites when it comes to dessert, but if I were forced to pick, I’d go with brownies!

I’m a big fan of the 2% Chobani flavors too – they are so creamy! Pineapple is definitely up there as one of my favorites too, especially in the summertime, it’s so tropical. I’m more of a brownies girl myself, while I won’t turn down either of them, I’m more likely to make brownies than blondies :)
