WIAW – Staying Cool & Hydrated
20 Jun
Happy What I Ate Wednesday! I did much better today with photographing my meals & snacks throughout the day than I did last week, so I actually have a lot to share!
To find out more about WIAW & to see what other bloggers are eating, check out Jen’s blog, Peas & Crayons!

I usually don’t eat anything in the morning before I workout, because I tend to do better on an empty stomach. However, this morning I woke up with a rather painful (& irritating!) headache, so I knew I needed to eat something to be able to take some medicine before heading off to spin class. (I can’t take headache medicine on an empty stomach; I get all shaky!)
Breakfast – Dunkin’ Donuts veggie egg white flatbread & a medium iced coffee
My plan was to finally try out the Van’s waffles I purchased at the store this week. My plans went awry, however, when 10:30AM rolled around & I still hadn’t eaten an actual breakfast.
Spin class was from 9:15-10:00, then I had a few errands to run afterwards. I knew I was going to be getting a DD iced coffee on my way home, but the desire for quick convenience took over as I was sitting in the drive-thru & I decided to go for the flatbread sandwich! (I’ll definitely be trying my new waffles tomorrow though!)
Lunch – Overnight oats & water (lots of water)
It was a scorcher in southeast PA today, so the thought of anything hot for lunch was not appealing. “Overnight” oats sounded perfect though, so I whipped up a batch & let them soak in the fridge for about 30 minutes. This batch was made up of…
- 2/3 c. oats
- About 1 c. almond milk
- 1 heaping tbsp. vanilla Greek yogurt
- 1 tbsp. chia seeds
- Sliced strawberries & raspberries
- 1 tsp. of my new Peanut Butter & Co. Cinnamon Raisin Swirl peanut butter
- And a bit of honey
I also was sure to drink a ton of ice water throughout the day – my persistent headache + the heat called for it. I must have filled up my “Bride” tumbler 6 or 7 times throughout the day!
Afternoon Snack – 100 calorie pack of Blue Diamond almonds & a mug of Awake tea, sweetened with Sweet-X Xylitol Crystals
Chris & I purchased a huge box of the individual packs of almonds on our last bulk shopping trip. I believe there were 32 packs in a box, which cost around $9.00 – so much better than buying the 5-6 pack boxes in the grocery store!
I received both the Tazo tea ($3.19 for a box of 20 bags) & Sweet-X ($4.20 for an 8 oz. container) from Swanson Vitamins & I am loving both products. I’m not the biggest fan of tea, but I really enjoyed this particular flavor. I added a tsp. of Sweet-X (I like most things sweet, in case you didn’t know!
) & loved how it added just a touch of sweetness without overpower the beverage. I’d recommend either product, & at Swanson’s amazing prices, you really have nothing to lose!
Dinner – Chicken casserole & green beans
I tried out a new chicken casserole recipe this evening, & it turned out awesome. (I’ll share the recipe soon!) Even though the casserole itself including veggies (love the all-in-one factor of casseroles!), I served up some green beans on the side because they were on their last leg.
Dessert – Frozen grapes
I’m really not the kind of person who counts fruit as a “dessert” (c’mon now…) but tonight, these frozen grapes hit the spot. They tasted sweet, cool, & refreshing… perfect for 100*+ temps! (Don’t be fooled, in reality I sat in the AC all day!)
So, there you have it! I actually have to pat myself on the back a little bit; I think I did pretty well today. I feel like I’ve been indulging way more than usual (or necessary!) lately, so it feels good to have reeled it in a bit.
What do you crave most in super hot weather? While the frozen grapes were good, I would’ve happily traded up for some frozen yogurt or ice cream!
Disclaimer: I received products from Swanson Health Products free of charge, however all thoughts & opinions on these products & Swanson are my own. (Seriously, their prices are amazing!)

I *LOVE* frozen grapes! ….and the fact that I can buy them in bulk when they are on sale and just pop them in the freezer (but I take them off the stems first)
pun intended! …It looks tasty too!
I also love the all-in-one’ness that a casserole brings to the table

Can’t go wrong with Dunkin Donuts lol I used to live in Boston and my roommate and I would always go there to get iced coffee and a treat on fridays before our early morning class. Obviously we would be hitting up the gym after lol

Their iced coffee is the best!
Frozen yogurt definitely helps when it’s hot out
Vans waffles are really good too. You’ll never want to buy another frozen waffle again!

Mmm! That cinnamon raisin swirl PB looks amazing. For some reason, I’ve been craving hotter foods lately. We made a tater tot casserole last night with ground beef and vegetables – comfort food at its best!

I am the smoothie QUEEN when the weather starts heating up. It’s weird because I’m usually not big on drinking my meals at all, but I just can’t help myself!

Dunkin Donuts has food items other than donuts?? I never knew! We don’t have a ton of them here so I always thought it was just donuts and coffee
