WIAW – Week 16

Happy What I Ate Wednesday & National Running Day! I celebrated the later by running 2 miles without stopping (except for a quick water break). This was the farthest distance I’ve ran non-stop, so yay me! ;-)

Today was sort of a WIAW fail for me; I only snapped a few pictures throughout the day. If you want to check out what other bloggers are eating (they probably documented their eats better than I did mine!) head on over to Peas & Crayons.

Jen chose the theme of “Sensible Summer Snacking,” for WIAW in the month of June. While I didn’t photograph any of my snacks today, I will be sure to next Wednesday. I’m actually looking forward to seeing everyone else’s sensible snacking ideas. With summer 1.5 days away (!!!!!!!!!!), I’ll definitely be at home more which equals more snacking; it’s just the way things go!

Today’s mix-ins were strawberries (so good!), walnuts, almond butter, a dash of vanilla, & a sprinkle of cinnamon – a winning combination!

Tuesday, today, & tomorrow are all “final days” at school. That means the kids are there in the morning taking finals (only 1 more to give!), but the teachers still have to work full days. The upside to this is that we get extended time for lunch – much better than our usually 20 minutes. Since Chris works second shift & I don’t get to chat with him much during the week, we used this as a chance to meet up for a mid-week lunch date. I went with my usual turkey sandwich, which I topped with provolone, spinach, & cucumbers (I always keep my sandwiches relatively plain).

This recipe is a staple in our household. I cut the green pepper a little bit larger than usual which added a new texture that I really liked.

Dessert – Oreo brownie

Tomorrow, we’re having a little celebration at work for two teachers who are retiring. Since I knew I wouldn’t have time to make anything from scratch in the middle of the work week, I went with one of my go-to, easy dessert recipes. Boxed brownie mix + vanilla frosting + crushed Oreos! It’s seriously so good & so easy; perfect in a pinch! Of course, I had to taste-test before I could serve them to others. ;-)

That’s all folks! I promise, I’ll be better with my pictures next week, especially since I’ll be on summer break!

    I love student half/teacher full days. The morning is crazy, but the longer lunch and extra time to grade is so welcomed. Enjoy your last few days before summer!

    I HATE that teachers and students don’t get much time to eat. I honestly think it should be illegal! For real— I HATE IT!!!!
    I like to add pumpkin puree to a boxed cake mix to make muffins/cupcake’ish things in a pinch. And they aren’t super unhealthy so I can feel okay about snagging one or two of them. :)
    I like your idea though! Mmmmmmmm!

    We don’t have anywhere near the boxed mixes that are available in the states. We have 2-3 Betty Crocker, 1-2 Duncan Hines and a few Australian options. That’s it. Since moving here I’ve learned to make most everything from scratch. It’s not so tough once you get used to it. :)

    Yay for being almost done!!

    Our lunch this year was also only 20 minutes – the year before was only 15! It’s ridiculous. I think when I’m a dietitian I’m going to work to change that :-) Teachers and students need more time to enjoy and appreciate their food.

    I love dolling up a boxed mix in a pinch. I have a recipe that uses a German chocolate cake mix as a base for a pecan/caramel bars. SO GOOD!

    Oreo brownies?! Sound amazing :-) I usually add extra vanilla to all of my cake mixes, and every once in a while I add chocolate chips to my brownie batter, no such thing as too much chocolate! Lol
