Favorite Summer Recipes

Hi friends & happy Tuesday! Doesn’t it feel good to start the work week with one day already done (that’s assuming you had off yesterday!)?

Today was yearbook distribution day at the high school where I work. I’ve mentioned it a few times before, but this was my first year serving as the yearbook advisor; it’s a big job! I actually had quite a bit of anxiety building up to today! Since it was my first year, I knew that there were mistakes & issues that I want to resolve for next year, but there was nothing that could be done about the books that were handed out today. I’m a perfectionist, so every little thing really gets to me!

Luckily, everything went off without a hitch & I haven’t had any complaints… yet (no matter what, someone will complain!).

While I got the day off from “teaching,” I also had a day filled with not-so-healthy food options. Even though I started the day with my usual overnight oats (I’m out of chia seeds & it’s definitely not the same!), I snuck a few munchkins. I also had pizza for lunch & a few other pieces of candy throughout the day. This is by no means a big deal, I’m just used to being more “on track” during the work week. I’m sure most of you can relate!

Since Memorial Day weekend marks the “unofficial” start of the summer season, I thought it would be a good time to share with you all some of my favorite summer-appropriate recipes. I’ve also been eyeing up some goodies on Pinterest, so I’ll have to do a separate round-up of recipes I want to try!

BBQ Turkey Burgers

I love myself a turkey burger! I’ve tried many turkey burger recipes in the past, but this is one of my favorites.

Onion, Fig, & Gorgonzola Pizza

I’ve only made this pizza once before – I need to make a trip out to Trader Joe’s for some of the ingredients! I remember it being absolutely delicious; the combination of flavors is spot-on. I saw Courtney had grilled pizza the other week, & now I want to try this pizza grill-style!

Asian Salad

I got this recipe from my aunt last summer; it’s delicious! The ingredients are easy-to-find & the recipe itself is so simple. This is definitely something to keep in mind for any picnics or family gatherings you may be attending this season.

Jell-O Poke Cake

My mom made this cake for my family’s Fourth of July celebration last year. It’s very light & refreshing – perfect for the summer months! You can also choose any flavor Jell-O which makes the possibilities for this cake endless.

Blubarb Sauce <— One of my first posts!

I was obsessed with this sauce last summer! I think the original recipe/inspiration was from Rachael Ray. I originally made the sauce to go with pork, but I ended up adding it to tons of my favorite foods, including oatmeal & English muffins. It’s really quite versatile! I suggest making a big batch & keeping it on-hand in the fridge; you won’t be sorry!

    I need to make a post on things to bake– to round them up so I don’t forget about some of the deliciousness that I’ve found on blogs and Pinterest! …..I need some good freezer casseroles for sure!
    I am eating all the fresh fruit I can get my hands on lately— geeze I want to eat a whole watermelon right.now. ….I’d take the BBQ turkey burger to go along side the whole watermelon!

      My husband & I almost picked up a watermelon this weekend, but our fridge is literally SO packed, we’d have nowhere to store it!

    I loved getting our yearbooks in school – it was so exciting (especially if you got your crush to sign it and then you could stare at his signature all summer long :)

    I love hitting farmers’ markets in the summer, so my favorite recipes involve local, seasonal produce. Here is a recipe for the best rhubarb crisp ever:

    All of those recipes look amazing!

    I definitely haven’t been eating a very nutritious diet the past week or so. With all of the excitement of the last week of school (when is your last day?) and then the long weekend, there was a lot of sugar and alcohol in the mix.

    I totally understand about wanting the yearbook to be perfect! I am definitely a stickler on editing and I can’t stand when I catch wording mistakes on my papers, or the blog! I am sure the yearbook turned out great though, you are a great writer and editor. I love reading your posts! congratulations on accomplishing your first year with this job! :-)

    My mother makes a summer dish called pasta caprese with cappellini pasta, fresh tomatoes and basil from the garden, EVOO and fresh mozzarella melted throughout. It is my favorite meal! When I get the recipe, I’ll share. :)

    Great idea for a post! I need to do something like this too girl, so many unique and in-season foods are available right now, and it’s time use them up! I like to make fresh fruit desserts in the summer, plus anything grilled
