WIAW – Week 14

First, I’d like to thank you all for your kind thoughts & congratulations on yesterday’s post! I actually met with our realtor for a few minutes today & she told me the “sale pending” sign is in the yard. :-) I can’t wait to document the first-time homeowner experience & decorating ideas here on the blog!

Moving on…

Time for another installment of WIAW – What I Ate Wednesday. Be sure to stop by Jen’s blog (Peas & Crayons) to see what other bloggers are eating!

BreakfastOvernight oats & coffee

I used my usual overnight oats base (2/3 c. oats, 1/2+ c. milk, 1 tbsp. chia seeds, 1 tbsp. vanilla Greek yogurt) & added in some raspberries & peanut butter this morning. Sadly, I was a little heavy-handed with the milk last night, so this batch was a little too “liquidy.” There’s always tomorrow… ;-)

Last night as I was packing my lunch, I spotted the jar of marshmallow fluff that I purchased for something I made for my Mother’s Day brunch. I knew that I needed to make a fluffernutter for lunch today! Sugar-laden? Yes. Delicious? Yes again!

The chips were sent to me to sample from The Better Chip, & so far, I’m a fan (full review to follow!).

DinnerBaked chicken parm bites atop rotini & peach tea

Inspiration struck this evening, & I decided to spend a little extra time in the kitchen trying out a new recipe (an Erica original!). I’m always a little leery of how something will turn out when I don’t use a recipe, but these chicken parm bites were awesome. I’ll post the recipe soon!

These little squares provide just the perfect amount of sweetness after a meal!

Do you usually eat something sweet after dinner? I always do!

    Just read about your exciting news–congratulations!! The house is adorable (I really liked the door, too!).

    Yes, I always want something sweet after dinner. I usually go for chocolate because it’s rich, but when that’s not enough, I bring out the ice cream cartons!

    There is always tomorrow with the oats… and I’ve never had a fluffernutter sandwich before. Sounds kind of delightful though!

    I’ve been working overnight oats back into my regular routine too now that it’s warmer. There’s raspberries in mine too! Love it!

    My mom grew up in Connecticut and seriously LOVES fluffernutters! Apparently it’s a New England thing, because my Massachusetts born college roommate loved them too. I can’t stand marshmallows personally, so it was always so disappointing when I’d open my lunch box in elementary school and every once and awhile my mom would pack me a fluffernutter. She didn’t believe me until middle school that I hated them – I mean, how many kids hate marshmallows?

    I have a fluffernutter for lunch today :) For me, there isn’t much more sugar in fluff than typical jam so I don’t feel bad eating it. And yes, 95% of the time I need at least a little something sweet after dinner (even if it’s a piece of candy, which is why I love those Ghiradelli chocolates, they are the perfect size!

    I just received those chips to sample in the mail as well, but I haven’t yet. I’m glad to hear I have something to look forward to!
