WIAW – Week 10

I can’t believe it’s already my 10th week of participating in What I Ate Wednesday, hosted by Jen of Peas & Crayons! Let’s jump right in, shall we?

BreakfastOvernight oats

Toppings included golden raisins, semisweet chocolate chips, 1 tbsp. peanut butter, & a drizzle of honey. I’m really loving this combination lately!

All mixed up…

I’ve been adding a little extra peanut butter lately, since you really can’t beat that “peanut butter in every bite” taste!

LunchLeftover taco salad & a pineapple Chobani

I completed all of the “prep work” for this salad last night so all I had to do was grab & go this morning! Of course, I welcomed the opportunity to use my new OXO LockTop containers to transport my toppings! (Don’t forget to enter the giveaway; it closes tomorrow!)

DinnerBruschetta Chicken Bake with green beans

I followed a this recipe, from Kraft Foods, & had the dish baking away while I completed a simple, at-home workout. I actually thought I had made this recipe before, but I think I was getting it confused with this recipe or perhaps this recipe? Regardless, it was super-easy to prepare & tasted great!

Lucky for me, I had to run an errand after work that brought me by my favorite cupcake store. I simply couldn’t resist going in & picking up a few cupcakes – cookie dough & peanut butter cup for me; strawberry shortcake & red velvet for Chris.

Time to pack up some leftovers for lunch tomorrow!

    I need to go check out the Kraft site- your recipes from there always get me thinking….
    Best thing I ate—Toss up between the massive salad I had for lunch and my Chocolate Coconut Almond Butter!

      I love the Kraft recipes! They’re usually so easy & don’t require too many ingredients.

    The best thing I ate today was probably dinner. Grilled turkey burgers totally hit the spot, probably because we haven’t been able to grill in a few weeks.

    Man that cupcake looks good!! I’d have to say the best thing I ate yesterday (since today I’ll have had is breakfast, which I guess was also spectacular) was fiesta quinoa, made with homemade guac! The recipe came from Peas & Crayons herself! :)

    That cookie dough cupcake looks delicious! My birthday was on Friday and I would have loved that :) The best thing I ate yesterday was a tamale at a Mexican restaurant in Milwaukee for lunch. I heart Mexican.
