WIAW – Week 9

Happy Wednesday everyone! Only two more days to go until the weekend!
Time for another What I Ate Wednesday post, hosted by Jen @ Peas & Crayons.

I know, I know… this is the same every week! Even though this Wednesday’s overnight oats look exactly the same as last week’s overnight oats, I promise you that I do switch things up every now & then (just not on Wednesdays, apparently!).
Lunch – Leftovers, blood orange Chobani + water
Lunch today went completely un-photographed, but as I said, it was simply leftovers from Tuesday’s dinner. I actually made one of my favorite meals — cheeseburger skillet pie – so I couldn’t wait to dig in at lunch time!

I wasn’t too good at snapping photos today, but I had a banana at the end of the school day & a cheese stick (sort of like string cheese, but not “stringy”) once I got home.
Dinner – Taco salad + water
I had originally planned on trying out a new pork recipe for dinner tonight, but after a quick workout at the gym I was craving Mexican. Luckily, I had the ingredients on-hand to prepare a simple taco salad.
First, I cooked up some ground chicken topped with taco seasoning. Then, I filled my bowl with shredded lettuce, chicken, plain Chobani, mild salsa, shredded cheese, & a few crushed Popcorners for some crunch.
This was so good! I had actually contemplated driving to Chipotle, but I’m glad I saved myself the time & money. All I needed was some of Chelsey’s Copycat Chipotle Cilantro Lime Rice to complete the meal!
Now, I’m off to track down some dessert!

I love taco salads! ugh i love chipotle it is always so tempting to go there my apartment is literally less than a block away from the closet one!

We are having tacos tonight too- when Modern Family comes on!
….I am thinking that they will be the best thing I’ve eaten all day.

The best thing I ate today was a piece of Banana Nut Bread at Starbucks. Yum!

I had a mini cinnamon roll–it was so good this morning when it was warm and gooey! I also had some peanut butter fudge which someone gave me for my birthday…it’s hard to decide between the two!

I absolutely love taco salads! It’s one of my favorite meals to ‘healthify.’ The best thing I have ate so far today was Kashi Go Lean Crunch Almond and Flax Seed, my top cereal choice!

I had taco salad last night!! It’s a really good way for me to get in a lot of veggies. I tend to do it meatless. I warm up some black beans and add taco seasoning to them. So good.

My breakfasts look the same almost every morning too.
For some reason it’s the only meal I can repeat over and over again without growing tired of it! If I ate the same dinner five days straight, I’d be an unhappy camper; but egg white omelets with cheese and spinach somehow always taste good!
I love taco salads–especially the finishing chip crunch touch on top. The only time my mom would buy Fritos when I was young was when we had taco salad bar night. I think I’d roll with the much healthier Pop Corners now though.
I feel the exact same way about breakfast — I never get tired of my overnight oats!
Ahhh you’re tempting me with these popcorners! I need to find them!
