Rainy Day Cookout

Happy weekend, everyone! I hope you’ve all been enjoying your Saturdays. Sadly, I did not win the Mega Millions last night, but I’ve had a pretty good day despite my disappointment. ;-)

After taking a few rest days since I hadn’t been feeling that well, I was back at it this morning, heading to the gym for spin class! This morning, one of my favorite instructors was teaching, & it made the 60 minutes fly by!

I already knew I had some overnight oats waiting for me at home, but I swung by Dunkin’ Donuts after spin to pick up an iced coffee, despite the chilly, rainy weather.

I love overnight oats during the week for their grab & go ease, but I’ve become so addicted that I’m even making them on the weekends, too!

In today’s mix:

  • 2/3 c. old fashioned oats
  • About 1 c. milk (probably a little bit more!)
  • 1 tbsp. chia seeds
  • 1 tbsp. plain Greek yogurt
  • 3 large, sliced strawberries
  • Topped with peanut butter & honey

I actually woke up with a pretty nasty sore throat this morning, so this breakfast was the perfect consistency & didn’t make matters worse!

After quickly showering, I was off to run some errands with my mom & sister.

Of course, we had to make a pit-stop at Kiwi Yogurt; however, since I haven’t been feeling all that great, I definitely exercised self control & only got a small portion of yogurt with very few toppings.

In today’s bowl:

  • Malted milk egg yogurt
  • Plain vanilla yogurt
  • Mini nonpareils
  • Mini peanut butter cups
  • Rainbow sprinkles

This was the perfect snack size!

After a stop at HomeGoods, we took Jake into Petsmart for the first time. He’s getting so big:

He’s actually graduating from puppy school this coming Wednesday. Man, they grow up so fast. ;-)

Once I returned home, I set out to do some of my own errands, which including grocery shopping for the week.

Before I knew it, it was time to start working on dinner.

Chris & I didn’t let the cold, dreary day stop us from our regularly scheduled dinner plans… hamburgers on the grill!

While Chris handled the grill, I made some of Tina’s sweet potato wedges & boiled some corn, which was surprisingly tasty despite it not really being “corn season.”

I topped my burger with ketchup & mustard, enjoyed the sweet potatoes with a squirt of ketchup, & added some butter to my corn. Everything was delicious, & reminded us both of summertime meal!

And with that, Saturday is already coming to a close!

Totally random tangent, but I’m pretty sure I work at the only school without a week-long spring break! We have off this coming Thursday, Friday, & the following Monday, but I’ve been hearing of so many other schools having the entire week off… no fair. Rant over. :-)

What’s your favorite way to eat sweet potatoes? Chris’s sister makes these delicious twice-baked sweet potatoes with mini marshmallows on top… so good!

    Baked sweet potatoes rock my socks off- with cinnamon and a tsp of honey. Be still my heart!
    Gosh, I really wish you could kick this whole not feeling 100% in the bum, it can wear a person out to not feel well….. and if I were you, I would have a whole rant post about not having a week for spring break. Look forward to the long weekend coming up though- it’s going to be great! :)
