WIAW – Week 6

Time for another What I Ate Wednesday post! For more information about WIAW, be sure to check out Peas & Crayons!

Since this is the final week of WIAW Goes Green, I decided to share with you all some of my favorite green foods!

Asparagus

Asparagus is actually one of my favorite veggies. It’s a great side dish that can compliment lots of main courses. Unfortunately, I don’t eat asparagus all that often because Chris really isn’t a fan!

Green Peppers

I add chopped green pepper to tons of different recipes, & I especially love stuffed green peppers. Raw green peppers also make a fantastic, healthy snack. Side note: If you didn’t already know, combining a packet of ranch mix with plain Greek yogurt is a fantastic dip!

Spinach

Smoothies are probably my favorite way to enjoy spinach. While I don’t mind the taste of spinach on its own, I love that you can pile in tons of spinach & still produce a non-veggie-tasting smoothie… it’s magic!

Kiwi

Kiwi is one of those items that I love, but rarely purchase. They’re usually pretty cheap, though, so I should really add them to my shopping cart more often! Kiwi has such a fresh, unusual taste that I love. I should work on incorporating kiwi into a recipe soon… hmmm ;-)

    I think I put green peppers in at least 1 meal/day! I love it! And cucumbers…so good!

    I always forget about kiwis too. I noticed that my grocery store sells boxes of them with mini spoons to eat them with… I never even thought to eat them right out of the flesh,
