WIAW – Week 4

I’m back for my 4th installment of What I Ate Wednesday! Be sure to check out Jen’s blog for more information about WIAW & to check out everyone else’s delicious eats!

Is anyone surprised to see overnight oats… again! I’ve definitely shifted my English muffin addiction to an overnight oats addiction. No other breakfast seems to keep me full for as long, though, so I just can’t help myself!
In the mix:
- 2/3 c. old fashioned oats
- 1/2 c. milk (more added in the morning!)
- 1 tbsp. chia seeds
- 3 thinly-sliced strawberries
- Topped with peanut butter & a drizzle of honey
During my prep period at work, I ate an (unpictured) banana. I’ve found that eating this as a small “snack,” not too long after breakfast really helps me to keep the hunger pains away until my lunch break.
Lunch – Leftover pasta, veggie, & cheese skillet & an (unpictured) Chobani.
This meal was just as good the second time around, but like I said in last night’s post, I need to be sure to add more protein next time to give this meal some staying power!
Dinner – Grocery store salad & personal pizza.
Just like last Wednesday, I stopped by my grocery store’s salad bar on the way home from work for a side salad. We only have spinach on hand in the apartment, & a bowlful of spinach didn’t sound that appealing to me!
The pizza is actually Lean Cuisine…
I know a lot of people hate on frozen meals like this, & I get it… the ingredient list is a little lengthy. However, this pizza is good. Like, really good! Sure, I could make something similar with my own ingredients, but to be honest, on some nights convenience way outweighs ingesting a few questionable ingredients! I think I’ll survive.
Dessert – Peanut butter egg that refused to be photographed.
I purchased some peanut butter eggs from my school’s cooking class, & they are dangerously delicious! For some reason, though, every picture I tried to snap turned out blurry. Ah well!
Am I the only one that actually LIKES a Lean Cuisine every now & then?!

I love Lean Cuisine! Quick, easy, and yummy! Have you tried the Asian dumplings? Delish!!!

I think I overdid Lean Cuisine living in my college apartment. I just can’t handle it…even on busy nights when it’s just me for dinner. Overnight oats and peanut butter eggs though? I can definitely get behind these!

I definitely have a few frozen meals in my freezer!! I agree with you that sometimes the ingredients list can be questionable but somedays all I can manage is a frozen meal. I would rather have the frozen meal with decent macros then snack on crap all night that leaves me feeling empty : )

I haven’t had a lean cuisine in a while (usually because I almost always take dinner leftovers for lunch), but I really do enjoy them! My favorite is the fettuccini Alfredo, I wish lean cuisine sold its Alfredo sauce bottled, I would definitely buy it! I think that having a frozen meal like this everyday is not the best option, but it is perfect in moderation for those times when you need something quick and easy!
I’ve totally tried that pizza before and LOVE it. Haven’t had it in a while but it’s so delish.

Best thing I ate on Wednesday was the chicken veggie rice bake I made for dinner- it was surprisingly amazing!

I love the Lean Cuisine pizza’s. Especially the french bread ones. But I try to stay away from them. Plus they don’t keep me full very long.
If you have a craving, they are a great alternative to ordering pizza!
Erica– Your overnight oats look so much better than pictures i’ve seen online. Do you eat it cold? Does it come out soggy? I have a texture issue but yours looks more like a cereal. Help me out!!!!
Yes, I eat it cold! The first time I tried overnight oats, I wasn’t a fan. I think it takes some messing around to find the combo you like best. I would recommend adding no more than 1/2 c. milk the night before, then more liquid in the morning as needed. I think this helps to avoid making them overly-soggy. I also don’t skimp on the Greek yogurt, because I think that helps with texture. One last thing… make sure you have some mix-ins… fruit, trail mix, peanut butter, etc. Otherwise, they’re going to be super bland.
