Sunday Dinner

Hey everyone! I hope that you all adjusted okay to Daylight Savings. I definitely felt the change this morning, but I love natural light & am so happy to still have it streaming in our windows at 6:00PM.

Today was a pretty standard Sunday around here… church, grading, laundry.

To get my day started, I enjoyed overnight oats in a jar.

I prepped this breakfast last night by piling the following ingredients into my almost-empty peanut butter jar:

  • 2/3 c. old fashioned oats
  • About 1/2 c. milk
  • 1 heaping tsp. chia seeds
  • 1 heaping tsp. plain Chobani

To finish things off, I added in some sliced banana & trax mix + a drizzle of honey this morning.

I enjoyed my oats while catching up on last week’s episode of Khloe & Lamar before the rest of the apartment (Chris & Stewie!) were awake.

My breakfast did a pretty good job of keeping me full, but I still needed a little something when I got home from church so I heated up what was left of my quesadilla from yesterday & topped it with some plain Greek yogurt.

Dinner tonight was the real star of today’s eats!

I mentioned in yesterday’s post that I planned on making Jana’s turkey meatloaf. I followed her recipe exactly, & made some roasted potatoes & broccoli to enjoy on the side. (I’m still working on always having a side dish!)

For the roasted potatoes, I used a container of small red/yellow potatoes, & cut them up into even smaller pieces. Then, I mixed about 2 tbsp. olive oil with rosemary, basil, & garlic salt, which was poured over the potatoes. I added some salt & pepper, then made sure everything was mixed together.

I roasted them (while simultaneously cooking the meatloaf) at 375* for about an hour, flipping occasionally.

Chris & I both loved the flavor of these potatoes, & I will definitely be making them again soon!

This meal was fantastic – a nice, comforting meal that I might not have time to prep during the work week; perfect for a Sunday evening.

With that said, leftovers are packed for lunch, overnight oats are prepped, & I’ve got just a few essays to grade/pieces of laundry to fold before I can relax & gear up for the week!

    I made turkey burgers tonight that were sort of similar. I always tend to make meals that require a few extra steps on Sundays for some reason. It always feels like I have more time but really, I start cooking the same time I do during the week. It just feels more relaxed I guess.

      I always think it’s weird how different the weekends feel from the weekdays! The evenings seem to fly by throughout the work week!

    I can’t remember the last time I made turkey loaf. It was a standard grown up. My mom would make it with baked potatoes and homemade cranberry sauce. It was heavenly.

    Those potatoes look awesome! When I am craving french fries, I always oven roast potatoes instead.

      These are definitely a great stand-in for fries! They were delicious as leftovers today, too.

    I love making stir fry, but it’s so much chopping!!!! It’s better if Kevin is free to help! :) Love those little red potatoes. I’ve been meaning to make them. Maybe I should this week for St.Patrick’s Day! :)

    It’s not a meal, but when I make hummus I have to soak the beans overnight, then cook them, then make the hummus. Lots of extra work!

    Lately my favorite meal has been roasted chicken. I’ve been making them on Sunday evenings since they take so long to make but they are just so good! Plus they make the house smell amazing!
