Hey everyone! I hope that you all adjusted okay to Daylight Savings. I definitely felt the change this morning, but I love natural light & am so happy to still have it streaming in our windows at 6:00PM.
Today was a pretty standard Sunday around here… church, grading, laundry.
To get my day started, I enjoyed overnight oats in a jar.
I prepped this breakfast last night by piling the following ingredients into my almost-empty peanut butter jar:
- 2/3 c. old fashioned oats
- About 1/2 c. milk
- 1 heaping tsp. chia seeds
- 1 heaping tsp. plain Chobani
To finish things off, I added in some sliced banana & trax mix + a drizzle of honey this morning.
I enjoyed my oats while catching up on last week’s episode of Khloe & Lamar before the rest of the apartment (Chris & Stewie!) were awake.
My breakfast did a pretty good job of keeping me full, but I still needed a little something when I got home from church so I heated up what was left of my quesadilla from yesterday & topped it with some plain Greek yogurt.
Dinner tonight was the real star of today’s eats!
I mentioned in yesterday’s post that I planned on making Jana’s turkey meatloaf. I followed her recipe exactly, & made some roasted potatoes & broccoli to enjoy on the side. (I’m still working on always having a side dish!)
For the roasted potatoes, I used a container of small red/yellow potatoes, & cut them up into even smaller pieces. Then, I mixed about 2 tbsp. olive oil with rosemary, basil, & garlic salt, which was poured over the potatoes. I added some salt & pepper, then made sure everything was mixed together.
I roasted them (while simultaneously cooking the meatloaf) at 375* for about an hour, flipping occasionally.
Chris & I both loved the flavor of these potatoes, & I will definitely be making them again soon!
This meal was fantastic – a nice, comforting meal that I might not have time to prep during the work week; perfect for a Sunday evening.
With that said, leftovers are packed for lunch, overnight oats are prepped, & I’ve got just a few essays to grade/pieces of laundry to fold before I can relax & gear up for the week!
