Strawberry-Banana Baked Oatmeal

Hi there. :-)

I hope many of you are not preparing to start another work week, but are instead looking forward to an additional day off for President’s Day tomorrow… I know I am!

In Friday’s post I linked to a recipe (found via Pinterest) for Baked Oatmeal with Strawberries, Bananas & Chocolate. Ever since, I’ve been thinking of how to recreate the dish on a smaller scale (the original recipe yields 6 servings). I looked over a few other baked oatmeal recipes I’ve tried in the past & came up with the following.

 

Just as I was typing up this recipe, I was thinking of other additions that would improve this recipe – brown sugar & vanilla extract came to mind first! I’ll definitely be experimenting, but I think the first time around was a success.

I topped my serving with some syrup & dug in!

Other eats of the day included…

Taco bake, leftover from last night.

With a few extra Tostitos, for good measure!

When dinner time rolled around, there was one thing on my mind…

Ever since last Sunday, I have been thinking about another burrito bowl. (Confession: I got one for lunch on Friday, too!) These are just too good to resist. In the bowl tonight…

  • Lettuce
  • Grilled chicken
  • Black beans
  • Brown rice
  • Mild salsa
  • Guacamole
  • Cheese
  • Plain Chobani (added at home, of course)

All mixed up! Not the prettiest sight, but looks can be deceiving.

To satisfy my sweet tooth, I enjoyed a few bites of last night’s dessert after lunch and dinner today… so good!

And now, I’m off to prep some French toast casserole for breakfast tomorrow before getting some pug snuggles in…

    I haven’t made any of your baked oatmeal recipes for a while, so I will definitely have to make this one! We have fresh strawberries that I could use this week, and I love the addition of the chocolate chips! Another favorite combination of mine is banana-peanut butter. I actually have my first day of work tomorrow, but enjoy your day off! :)

    The baked oatmeal looks delicious! I love the pop of color from the strawberries. If only the weekend was longer than two days so I could have more mornings for breakfasts like this… unfortunately I don’t have off work tomorrow, and Bob has an in-service day. Hoping to at least wake up early enough to prep dinner before work!

    That oatmeal looks amazing! I have yet to attempt making baked oatmeal after having it at our blogger meet-up but your recipe makes it look so simple.

      Sadly, an at-home version I’ve tried hasn’t quite matched up to the deliciousness of the Hershey Pantry!
