Skinny Chicken Parm

Hi everyone! We’re officially over “the hump” & creeping closer to the weekend… woohoo!
Tonight’s post is going to be short & sweet. I’ve been totally failing at my goal of waking up at the first sound of my alarm – often “sleeping in” an extra 10-15 minutes. I know I need more sleep, so I’m trying to make sure I’m done with my to-do list early tonight! Plus, I’ve got a long day ahead of me tomorrow, so I definitely need as much rest as possible!

Last week, I saw this post on Ashley’s blog & it reminded me how much I’ve been wanting to make chicken parm.
In order to save time (& calories!), I whipped up an extremely easy & quick “chicken parm bake.” Even better? This meal only requires 4 ingredients, all of which are cheap & you’re likely to have on-hand!
Skinny Chicken Parm Bake
Ingredients:
- 4 chicken breasts
- Pasta sauce (I used garden vegetable for added flavor)
- Shredded mozzarella cheese
- Thin spaghetti
Directions:
- Preheat oven to 400*.
- Spray a shallow baking dish with cooking spray.
- Place chicken breasts in the baking dish & season (I used salt, pepper, & garlic salt).
- Cover chicken with pasta sauce & top the entire dish with a generous portion of the shredded mozzarella.
- Bake for 25 minutes, until chicken is cooked through.
- Serve on top of spaghetti!
Fast, easy & Chris-approved; definitely one to add to our dinner rotation!

Dinner rotation. I feel like I need to expand my rotation. I bet the husband is getting sick of my teeny tiny rotation of meals. Good one to add to my rotation
I’ve been trying a lot of new things since getting married, but I’m running out of ideas/getting busier as the school year progresses. My husband may be seeing a few familiar meals in the near future!
I definitely eat pasta and pizza on a weekly basis!

Same with me & pizza! Pasta I would like to eat at least once a week, but my husband isn’t a huge fan of pasta-based meals.
thanks for the shout out! I’ve seen these mysterious thin sliced chicken breasts at the grocery store, usually end up grabbing chicken breast strips or tenderloins because I don’t know what to do with the thin sliced breasts – until now! your variation is definitely going to be on next week’s menu

This is SUCH an awesome recipe! So easy and I’m glad you didn’t include any type of pasta or breadcrumbs in the bake because now it’s wheat free!
