Sweet Potato Soup

It’s no secret that I love my crock pot. Is there anything better than throwing a bunch of ingredients together, walking away for 6+ hours, & coming back to a warm, complete meal? I didn’t think so.
I’m extra “proud” of this recipe, because it originated all from my own little mind! Normally, I “borrow” recipes from other bloggers, occasionally making my own tweaks, or I look up recipes via websites like Campbell’s Kitchen.
When I was making my grocery list/meal plan for this week, I knew I would need quick meals for Monday & Tuesday, since it’s parent/teacher conference time. Immediately, I knew I would be using my crock pot & began thinking of what ingredients might go well together.
I proudly present:
Sweet Potato Soup
Makes about 4-5 bowls of soup.
Ingredients:
- Two large sweet potatoes, peeled & cubed
- 4-5 carrots, peeled & chopped
- 1/2 of a yellow onion, chopped
- 1 can chickpeas (drained)
- 1 & 3/4 cans (14.5 oz) vegetable stock
- Grated garlic (to taste; I grated several cloves)
- Salt & pepper (to taste)
- 2 heaping tbsp. of flour
I prepped all of my ingredients Sunday evening, while Mama Pea’s Quinoa-Stuffed Peppers were cooking away! I have no time to spare getting out the door in the morning, & certainly wouldn’t have time to peel & chop potatoes. Doing the prep work the night before, & storing the ingredients in tupperware containers definitely makes for a less-hectic morning!
Directions:
- Place all ingredients in the crock pot; stir to combine.
- Cook on “low” for 8-10 hours (I was away for 10 hours, & I’m assuming 8 hours would be plenty of time.)
- The soup may look a little “watery” — don’t worry! Stir the soup & add in the 2 tablespoons of flour. Stir again & let sit for an additional 10-20 minutes or so until the soup takes on the consistency of the sweet potatoes.
- Serve & enjoy!
The only thing we were missing was some hearty, fresh bread! That would have made the meal!

This dog loves his toys…
Our bed is too high for him to jump up on his own, but he also likes to have a pile of toys with him when we sleep every night. Therefore, every night, he brings in a toy, gets lifted onto the bed, jumps down, & repeats this process until he has an adequate number of his buddies with him.

Thanksgiving break is on the horizon, friends! Only a 1/2 day of in-service tomorrow & then no work until next Tuesday!
What are your holiday plans? Anyone brave enough to cook the big meal on their own? Chris & I live in a 1-bedroom apartment, so I’m fairly certain no one would want expect us to host Thanksgiving. We’re going to my Aunt & Uncle’s house & Chris’s parents’ house, & I plan to cook up some goodies tomorrow afternoon!





I love crock pot recipes! This one looks delicious! I am going on a ski trip over new years, and we are planning on bringing a crock pot (or two). This way we can have dinner cooking while we are out during the day!

My fiance and I also live in a one bedroom apartment so Thanksgiving here is not an option. However, we will be having a big friends party- they don’t care about how much room we have

I’m new to my crock pot so I am always looking for new recipes to try out. I have never hosted a holiday meal. This year I am contributing a pie, cranberry sauce and Brussels.
I’m pretty sure my 2 year old would love this soup! He LOVES sweet potatoes!

Yummmm! I have never made sweet potato soup, but it looks delicious. Any recipe that uses a crockpot is a winner in my book!
I actually cooked all of Thanksgiving dinner and hosted in our 1 bedroom apartment 2 years ago. It was fun! This year I am just in charge of the 25 pound turkey!
