Weekend Re-Cap & a New Breakfast Recipe

Hello friends. :-) I hope everyone had an enjoyable weekend! As always, it has come to a close too soon, I’m afraid. On the bright side of things, this is my last full week of work before having a mini-break for Thanksgiving!

Friday night was pretty low-key. I wrote this post – a compilation of some of my favorite Pinterest dessert finds, but other than that, nothing of note really went down!

Saturday morning I headed off to the gym. I was planning to take a BodyPump class, but woke up with a headache & decided to pass. Instead, I completed 45 minutes on the elliptical, & made a stop at Dunkin’ Donuts for some pumpkin coffee! :-)

Later Saturday afternoon, Chris & I headed to BJ’s Wholesale Club for the first time! We hadn’t done any bulk shopping together, & we kept saying how much fun we were having… yes, we’re that cool! The day’s most notable finds? A giant container of Nutella for $4 (!!!) & a super-sized carton of Ben & Jerry’s pumpkin cheesecake ice cream for $5.

I didn’t blog yesterday evening, but I did update my Recipe page. It hadn’t been updated since August 28 (what the heck?!), so it was in major need of some attention.

In need of some work…

I’m trying to get all of my blog “ducks in a row” because there will be some changes happening around here at the end of the month! ;-)

This morning, I was up bright & early & got to work in the kitchen. I made a new baked oatmeal recipe for Chris & I.

S’mores Baked Oatmeal for 2

Ingredients

  • 1 & 1/2 c. old fashioned oats
  • 2 egg whites
  • 1/4 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4-1/2 c. milk
  • 1/4 c. milk chocolate chips
  • 1/4 c. mini marshmallows

Directions

  • Preheat oven to 350*.
  • Mix all ingredients together.

  • Spray 2 mini loaf pans (or anything similar) with cooking spray & divide oatmeal mixture evenly.

  • Bake at 350* for 15 minutes, then turn the oven to broil & bake for an additional 3-5 minutes.

I topped mine with some powdered sugar & enjoyed the oatmeal alongside of a cup of caramel coffee!

After church & lunch with Chris’s parents, we made the mistake of going to a local home builder’s open house. Now we have the house itch – bad! ;-)

    I’m excited to move back home in a few weeks because most of my baking and cooking essentials are there, like my mini loaf pans! I will definitely be trying the baked s’mores oatmeal. Good idea!

      The Hershey Pantry last weekend got me thinking of ways to jazz up my own baked oatmeal! Sadly, it didn’t quite compare, but it was still good! :-)

    A large container of Nutella for $4?!?! Wow that sounds awesome. I am in love with Nutella but rarely buy it because of the price tag. I’d be excited too! I wish we had a BJ’s around here!

    Your baked oatmeal recipe sounds really good. I’ve actually never tried baked oatmeal, but your recipe is making me want to!

    OMG I used to LOVE shopping at BJ’s in college – you are right.. it was always so fun!! :) haha. You’ll have to fill me on on the house stuff tomorrow at work! :) Your blog always makes me so hungry at night when I read it haha. ;)

    Man that is an awesome deal on Ben and Jerry’s! I have been looking for the pumpkin flavor and haven’t been able to find it in any of my local grocery stores. S’mores are one of my favorite flavors. I can’t wait to try your recipe next weekend.

    wow! 4 dollars for a big jar? that’s my idea of heaven. i’m obsessed w/ the stuff, i can’t really keep it around too often because i will think about it in bed at night and then go into the kitchen and eat it w/ a spoon. (not kidding). nice steal!
