Meatloaf Mashup

I purchased some lean, ground turkey at the grocery store this week, intending to make turkey meatloaf. I had originally planned to follow the same recipe I used the first time I made turkey meatloaf, but I decided to switch things up tonight & made a list of random ingredients I wanted to include.

Erica’s Turkey Meatloaf

Ingredients:

  • Lean, ground turkey
  • 1/4 c. oats
  • 1/4 c. bread crumbs
  • 1/2 onion, chopped
  • 1 egg + 1 egg white
  • 1 tbsp. Worcestershire sauce
  • 2 tbsp. ketchup
  • 2 tbsp. BBQ sauce
  • Salt & pepper
  • Sprinkle of garlic salt
  • Sprinkle of poultry seasoning

No, I didn’t use soy sauce, but I didn’t realize I grabbed the wrong bottle until after I snapped the picture! ;-)

Directions:

  • Preheat oven to 350*.
  • Mix all ingredients together in a large bowl.

  • Spray a baking dish (I used a 7×11 glass dish) with cooking spray, & spread the meat mixture evenly, covering the dish.
  • Top with extra ketchup if you so choose! :-)

  • Bake for 1 hour.

Since this dinner required a little more baking time than I’m used to, I made myself a salad while I was waiting.

After working on some school stuff, dinner was ready!

I cut myself an end piece (love the extra crunchiness around the edges) & served up my slice with some corn on the side!

For dessert this evening, I enjoyed two (new) dark & sea salt caramel Ghirardelli squares:

Side note: When I visited Ghirardelli’s website to link to them, I noticed they advertised pumpkin spice caramel squares! Has anyone tried these?!

Off to get some grading done! Hope everyone’s weeks are off to a great start! :-)

    I haven’t had meatloaf in years but I remember loving the ketchup sauce my mom made on her recipe.
    Those squares look amazing but I haven’t seen them around yet. I’ll start looking harder. ;)

    I don’t necessarily need something right after dinner, but definitely by the end of the night! Even just a little piece of chocolate always does the trick!

    I regulary make turkey meatloaf but love this new-to-me recipe – can’t wait to try!!!! Thanks! :) And yes, I’ve had the pumpkin spice Ghirardelli squares, one word – AMAZZZZZZZING!!!!!!!! They’re hard to find, even during pumpkin season, but I’m always on the look for them!

    Meatloaf is one of Chase’s favorite meals! He likes it hot and loves it cold in sandwiches. I have never tried to make meatloaf with ground turkey. I will have to give it a try!

    Meatloaf is one of my absolute favorites. When I was little, I used to love when my mom would make it for us. Yours looks delish! I may have to try this recipe at some point.

    I just recently made a turkey meatloaf for my husband and me – mmm love the stuff! It reminds me of growing up because my mom would make it on a regular basis. And yes! Definitely always need a little something sweet after dinner. :)

    I HAVE to have something sweet after dinner- even if it’s just a little bite. I can usually get by with just a bite of two of dark chocolate, but if I had my way, I’d have a bowl of ice cream every night!
    Those Ghiradelli squares look AMAZING- I love that combo!!

      Same here! I have trained myself to eat something sweet right after dinner… it’s always an immediate craving!
