It’s going to be a quick one tonight! ;-)

I’m sure at least some of you have heard of “BFD” – breakfast for dinner. Well, tonight I broke out a different acronym. “LFD” – lunch for dinner.

It was sandwich night in our apartment! Normally, I associate sandwiches with lunchtime, but this sammy is definitely worthy of being called dinner!

To make the sandwich, I used my panini maker, but I’m sure a toaster oven would do just fine too!

First, I sprayed two slices of wheat bread with cooking spray. Then I layered brie, turkey, & apple slices (& topped it off with more brie, for good measure!).

I love brie, so I knew this would be a winning combo & it definitely was! (It’s Chris-approved as well!)

I served my sandwich with a few extra apple slices & some pretzels. In total, I think it took maybe 15 minutes to put this meal together, which is perfect for a busy weeknight!

 

What’s your favorite sandwich? I love peanut butter & jelly (yes, I’m 5).

    This looks fabulous!!!! I’m going to start stopping by during dinner time ;) haha. My fav sandwich would have to be turkey and cheese (I know.. boringgg) or grilled peanut butter – THE BEST! :)

    I think Brie is my favorite cheese. I love that appetizer with brie and jelly in a pie crust. I love peanut butter and banana sandwiches. And also cream cheese and jelly.

      It’s awesome! It heats up super fast & warms up the sandwich quickly too!

    Oh. How I love paninis! I’m a huge PB&J fan too. I could eat it EVERY DAY> Now I like to make it with PB2 & sugar-free jam.

      Me too! I feel silly that I’m 25 & still packing it for lunch at least twice a week! :-)

    This is an excellent idea! Chase is a sandwich superfan so I should totally keep this idea in my arsenal! I actually am not a big sandwich girl (I know, totally un-American!). However, a solid PB&J or Peanut Butter, Banana and honey is nice.
