They Didn’t “Go”

Back to the grind! I hope everyone’s weekend was full of rest & relaxation. Last night, I got sucked into watching part of the Real Housewives of New Jersey reunion special. I find it unfortunate that on the weekends I manage to go to bed at 9:30, but on a “school night,” I’m up until 10:40 watching trashy tv! Oh well…

Crockpot pulled chicken is quickly becoming one of my favorite go-to recipes! I found a simple “recipe” on Julie’s blog for “salsa chicken,” which I tried out this evening.

Normally, if I’m making chicken in the crockpot, I simply place boneless, skinless chicken breasts in the slow cooker, cover them with chicken stock, & let them cook away while I’m at work.

Today, I place three chicken breasts in the crockpot, & dumped enough salsa on top to cover them – it’s that simple!

After a day of cookin’!

Between work & the gym, I turned the heat from “low” to “warm,” & when I got home from the gym, I shredded the chicken using two forks while simultaneously preparing some of my favorite Trader Joe’s harvest grains blend (I seriously cannot get enough of this stuff)!

At first glance, the grain blend & salsa chicken don’t appear to “go” together, & I was a little hesitant about mixing the two, but I was pleasantly surprised.

I topped a layer of grains with a healthy scoop of salsa chicken & sprinkled the whole thing with salt, pepper, & garlic salt; totally random, but tasty!

For dessert this evening… half of a homemade apple dumpling! My mom purchased two apple dumplings for Chris & I from our church (I ate the other half last night, in case you were wondering!).

This year, the apple dumplings were good (not great), & it managed to satisfy my sweet tooth, so I was happy!

What are some weird combinations of food that you mix together? Oreo cookies + peanut butter might not be “weird,” but it’s unexpected & delicious! (I just thought about dipping an Oreo in Nutella… yum!) Another random combination that comes to mind… I always see students at school dump ranch dressing on pizza! Has anyone ever tried that?!

    That dinner looks great! I love adding salsa to chicken. Actually, I like adding salsa to EVERYTHING. ;)

    Pizza dipped in ranch dressing is the bomb.com, actually anything dipped in ranch is awesome! I ate one and a half apple dumplings tonight… Whoops, but you know your sister can put food away!

    You guys must have gotten a bad dumpling because ours where delish! I ate the whole thing on Saturday night. I put vanilla ice cream on top of mine!!

    ROHNJ is so trashy, but it is SO addicting!

    My cousin loves eating pizza with Ranch dressing–so bizarre!

    I love cold chicken with ketchup; is that weird?

    Apple dumplings? Yummmy!

    My weird food combination is grilled cheese and ketchup! Or taco seasoning and macaroni and cheese..super weird, I know.

    Mustard to dress a salad. If there is nothing acceptable around and I just don’t want it dry- I put on a tablespoon of mustard and call it a deal. EVERYONE thinks it’s weird.
    That apple dumpling looks delicious. Church food has so much love in it- that’s my favorite part! :)

    Oh my gosh that apple dumpling looks absolutely amazing. I love sweet potatoes and hummus and/or nut butter. SO good together!
