I love the weekends; who doesn’t, really? It gives me a chance to get a bunch of random “to dos” done, & usually leaves at least some time for relaxing.

Saturday morning began with a trip to the gym. I was planning on taking a BodyPump class, but I just wasn’t feeling it for some reason. My knees were bothering me a little bit on Friday night, so the thought of making it through an entire BodyPump class just wasn’t appealing. I know I can’t go on Tuesday, either, so I figured giving myself a break until this Thursday might be just what I need.

Anyway, after the gym, I swung by Dunkin’ Donuts to pick up a beloved pumpkin coffee. I began working on breakfast as soon as I got home!

Last week, on Julie’s blog, she shared a banana/oatmeal mini loaf that looked delish (I even gave it a shout-out in Friday’s “Recipe Roundup”.) It inspired me to come up with a totally new (to me, anyway) “boatmeal” (baked oatmeal).

Chocolate Chip Pumpkin Boatmeal

Serves 1

Ingredients:

  • 3/4 c. oats
  • 2 heaping tbsp. pumpkin
  • 1 handful (about 1.5 tbsp.) chocolate chips
  • 1 tsp. chia seeds
  • 1/4 tsp. baking soda
  • 2 tbsp. milk
  • 1 egg white

Directions:

  • Preheat oven to 375*.
  • Combine all ingredients. Pour into an individual loaf pan (sprayed with cooking spray).
  • Cook for 15-18 mins.

Topped with brown sugar & syrup!

Especially tasty served alongside pumpkin coffee! ;-)

And this is totally random, but… Some of you were interested in my Shellac manicure a few weeks ago when I posted about it. I snapped a picture to show you how well it holds up…

The last time they were done was October 1st. I usually go every two weeks, but couldn’t go this past Saturday. As you can see, no chipping! Pretty amazing considering I constantly use my hands for typing, cleaning, washing dishes, etc. Ok, enough of my Shellac endorsement! ;-)

Now, onto the fun finds!

The other day I mentioned that I was working on making some final purchases off of our wedding registry – gifts we didn’t receive, but still sort of wanted needed.

This, my friends, is what happens when I make a solo trip to Bed, Bath, & Beyond:

Lots of goodies were purchased!

First up, a new dog-bowl mat for Stewie. If you have a “messy” pet, you’ll understand why this was so exciting…

When Stewie drinks water, he usually drips all over the floor as well. This mat is supposed to absorb excess water, & the best part is, you can machine wash it! (Oh, & just FYI, no this was not an item off of our registry!)

Next up…

A K-Cup fall sampler pack! It includes a mix of pumpkin spice coffee, apple cider, cappuccino, & milk hot chocolate. I tried the pumpkin spice & Chris tried the apple cider this morning & we were both impressed, so I can’t wait to give the other flavors a try.

Last, but not least…

Fun cutting boards! We desperately needed extra cutting boards, & we registered for these because we thought it was super-convenient that they’re labeled for use with certain foods. This way, you don’t have to worry about any questionable cross-contamination!

Later on in the evening, I had another fun find, this time at Kiwi Frozen Yogurt – pumpkin pie yogurt!

I filled up my cup with:

  • Pumpkin pie yogurt
  • Red velvet yogurt
  • Chocolate yogurt
  • Cookie dough topping
  • Reeses peanut butter cup topping
  • Rainbow sprinkles

A delicious ending to the night!

    Pretty much everything you put in my box was a fun find….. A fun find for me was revamping a buffalo chicken wing recipe for the husband last night and completely helthifying it! Mmmmmm! Even I would eat it!

    I want a Keurig SO MUCH! Gosh, those K-cup flavors sound glorious!

    My weekend “Find” is the Whole Foods salad bar–so many yummy vegetable options! Too bad the closest one is an hour away–boo!

    Oh my goodness. Why haven’t I seen the Keurig Fall Sampler? Good find! The pumpkin spice is delicious. :)

    I am mighty impressed with the manicure. I am so “rough” on my nails… maybe I need to try one out. I love the pumpkin coffee for Keurig. I need to stock up before they take it off the shelves for Christmas flavors. Also, check out AC Moore… they have mini Halloween loaf pans for 1 dollar.
