Taco Tuesday

Hi all; hope the week is treating you well so far. Tomorrow is Wednesday already – woohoo! :-)

Today was another super-sized morning for me, so I had the time to actually sit down & enjoy breakfast. On the menu today? A small bowl of generic Honey Bunches of Oats (& it really was small since it was the last of the box) topped with banana slices, the other half of the banana, a Chobani Champions yogurt & my 2 daily gummy vitamins! (And of course some coffee, too!)

I bought the Chobani Champions yogurt at the store last week because my grocery store had very slim pickings of the regular Chobani flavors (apparently it is becoming hard for the store to get their hands on the stuff). I think all they had was honey & lemon, & while I don’t necessarily mind those flavors, I didn’t want to only eat that for the entire week. The “Champions” yogurt – intended for kids – was actually pretty tasty & had a “fluffier” consistency than the regular Chobani. (Have no fear though, I stocked up on pomegranate, pineapple, & raspberry this week.)

My day at work flew by. I came home again for lunch, but I was so ravenous that I didn’t snap a photo. I’m pretty sure you all know what a turkey sandwich looks like, right? ;-)

Not long after I arrived home from work, this beauty showed up:

I finally got around to ordering some of our registry items that we didn’t receive for our wedding – it only took me a little over 2 months! ;-)

I was super excited to get this fruit basket because I’m a super lame awesome person!

After BodyPump this evening, I headed home to get “taco Tuesday” rolling. I used an Old el Paso taco kit to help everything come together quickly & was pleasantly surprised by the nutritionals (they weren’t as bad as I thought they would be!).

I quickly cooked up some extra-lean ground beef, added the taco seasoning to the meat & I was good to go.

My tacos were stuffed with:

  • Extra lean ground beef
  • Shredded cheese
  • Taco sauce
  • A dollop of plain Chobani

If you haven’t substituted plain Chobani for sour cream yet, definitely try it ASAP!

When a meal comes together this quickly & is tasty too, I call that a success!

And now… off to work on some random stuff while I’m still feeling somewhat productive!

What’s your favorite Mexican dish? I was tempted to turn these tacos into taco salad, which I really enjoy; but, I’d have to say quesadillas are my favorite Meximeal!

    I recently became addicted to greek yoghurt, and agree it is the PERFECT sub for sour cream!

      Me too! I got it because we are planning on using soft shells later this week to make enchilladas, so I was happy to see they weren’t too bad!

    In my chili the other night I used Greek yogurt as sour cream for the first time. I couldn’t tell the difference at all!

    I started taking gummy vitamins too :) Sooooo much fun! And they’re so tasty too!!!!
    PS- I received THE BEST package in the mail about 30 minutes ago! <3 Sooo sweet! Can't wait to dive in! Honestly, thank you! I am so excited!

    I didn’t know they made adult gummy vitamins! I still have the kids ones:) And speaking of kids… I love the kids chobanis too. I think the honey vanilla flavor is even better than the berry one. My favorite mexican dish is fajitas.

      I got the vitamins at Target! They’re awesome.

      I didn’t see the other flavor at my store, but I was pretty impressed with the berry!

    Adult Gummy vitamins were the most brilliant idea ever! They are SO yummy!

    I love Taco Tuesday! Such a fun weeknight meal! I love fajitas. The grilled onions are my favorite!

    Yum!! I miss tacos SO much! The last time I had anything remotely like it was chili and even that was over a year ago. Too long..
