I feel like I’m going to have a lot to say tonight; not about one thing in particular, just re-capping my day! :-)

I mentioned yesterday that today (& tomorrow) was an in-service days where I work. That means I got to enjoy a more “elaborate” breakfast than usual. And by elaborate, I mean a bowl of oatmeal, so don’t get too excited. ;-) I’ve really been loving the oatmeal lately.

In today’s bowl:

  • 1/2 c. oats
  • 1 small apple, chopped
  • Chia seeds
  • A small spoonful each of peanut butter & Nutella
  • Sprinkle of cinnamon

I had a new type of K-Cup to try out on the side… Folgers Caramel Drizzle.

I’ve tried Folgers-brand K-Cups before, & was neither impressed nor disappointed. Since I had a coupon, I figured I’d give this new-to-me flavor a try & it was really good. I’m already looking forward to my cup tomorrow morning.

I was able to come home during my lunch break today, & I put together an Italian-themed meal using my leftover ravioli & meatball from last night’s dinner, plus 2 stuffed peppers that Chris bought yesterday & a slice of bread on the side.

When I came back home for the day, I started trolling the internet for various “Couch to 5K” programs. I had attempted to start one last spring & I think I completed a day or two before calling it quits.

A little while ago I read this post on Chelsey’s blog about her experience with running, & it inspired me to give it a go again.

Today, I completed 20 minutes on the treadmill. I started with a 5 walking minute warm-up & then alternated between 1 minute jogging & 1 minute 30 seconds walking until I reached 20 minutes. If you’re interested, my “fast walking” pace is 4.0 & my jogging pace was 6.0 (I’m just about 5’3” & have short legs!).

It was difficult at first, but by the time I got further into the workout, the jogging portions felt easier & I was able to jog for 2 minutes straight at one point, so I took that as a good sign. (Hopefully not too many of you are rolling your eyes!)

Yesterday, when I was catching up on my DVR, I saw a Hungry Girl episode with a recipe that would be perfect for meatless Monday!

I followed this recipe for Stuffed ‘n Squashed Mushrooms. The “stuffing” was really tasty & although I had my reservations, I was actually pretty full after this meal.

I had planned on making quinoa as a side dish, & when I saw this post on Brittany’s blog this afternoon, I made the game-time decision to add 2 heaping tablespoons of pumpkin to the quinoa. It was interesting, but something was off with the quinoa. I’ve never tried Trader Joe’s brand before, so maybe it just has a different taste?

And now, I’m off to complete a few “to dos” before relaxing (hopefully with some ice cream!).

    I feel that everyone is SO different when it comes to exercise- as long as your heart is pumping faster, it doesn’t matter what you’re doing! Walking, running, swimming, dancing, kickboxing, ext it doesn’t matter….Oh, and as long as you’re having fun doing it too! …I’m proud of YOU! Yay for a morning that is ‘longer’ than normal!

      I totally agree Julie! That’s why the last time I tried to do a couch to 5k I only lasted 2 days. I just wasn’t into it & was thinking well this is just stupid to “force” myself to do an exercise I don’t like! I’m hoping it goes better this time around since I actually WANT to do it!

    I’m not the best runner, but the “Couch to 5K” app on my phone helped to prepare me for a 4 mi. run I did with my friends this past April. I would definitely recommend that. Also, I will have to try those Kcups! I’m always looking out for new flavors of coffee to try!

    Glad to see your comment on the quinoa, I thought it was me that I didn’t do something right when making it. I thought it was pretty bland, definitely needs something added to give it a little “kick”!

      Yeah, I think it was the Trader Joe’s brand? The kind I bought at the grocery store was much better!

    Aw yess, you mixed the pumpkin! I’m sorry that it tasted weird with the quinoa :( You’ll have to try it again with rice! I promise, it’s very tasty!

      I don’t think it was the pumpkin; I think it was the quinoa! I had only ever tried another brand & I just don’t think the TJ’s kind is quite as good!

    I’m a new runner myself… so I need tips too haha. I’ve been loosely doing the C25K program too. And I’m liking it :) I can’t wait until I can call myself a runner…
