When do you Rest?

Today, I decided to take a rest day from the gym. It’s become increasingly important to me since the school year began to make sure I have a rest day during the week to catch up on things that fall by the wayside throughout my week days. This afternoon I was able to get a hold of some credit card companies to update my new last name (I had been putting this off because I knew it would take forever), balance our checkbook, work on some laundry, etc. While none of this is fun, & I’d probably rather be at the gym, it’s essential that I take a day to do all of these tasks so I don’t feel overwhelmed.
In the midst of completing some of my “chores,” dinner had to be cooked!
This past weekend at the store, I had purchased a large salmon filet to enjoy at some point during the week & tonight was the night.
Before baking the salmon at 350* for 20 minutes, I lightly coated the filet with a mixture of extra virgin olive oil, lemon juice, rosemary, thyme, & pepper. Instead of drizzling the olive oil & lemon juice over the salmon, I used a basting brush & put a light coating on top. I was hoping this would cut down on the “oily-ness” of the fish, & I think it worked!
On the side, I cooked up some of what is quickly becoming my favorite side dish — Trader Joe’s Harvest Grains Blend. I already wish I had picked up another bag when I was there last weekend!
This was a delicious meal that came together in about 20 minutes. I also loved this meal for the fact that it was a “set it & forget it” meal – once the salmon was in the oven & the grains were simmering, I was free to multi-task & get back to my “to do” list!
Enjoyed with a nice cold glass of diet green tea.
For dessert? A small handful of candy corn! (Don’t be fooled by my labeling it “small”; I’m sure several more handfuls will be consumed this evening!)

On another completely random note, Chris & I have been married for 2 months! To commemorate the day, I’ll share with you all this picture of our cake while I wish I had a giant piece of it to dive into!

You might not hear from me tomorrow night as I’ll be attending the Phillies game 5 playoff game! Ahhh! I seriously cannot believe we managed to get tickets, but my sister, Chris, & I are so pumped & ready to cheer on the Phils!

I’ve been planning to do several wedding posts — just waiting for our pictures! There was a little “miscommunication” with our photographer, but I should have them soon!

I can’t believe that it has been two months!! Isn’t being married wonderful!
….I take rest days when my body is so tired it turns the alarm off without my mind’s consent! I work out in the mornings because I always skip it if I do it after school, I’m pooped when I get home AND I never know what time I get home. It varies so much. I have about 1 to 2 rest days a week, sometimes 3 though. WHatever works!

I would love to get my workouts done in the morning! Unfortunately, I get up at 5 just to get ready for work & my gym only opens at 5 so I just wouldn’t have enough time!

I try to take one day off a week, but the day is always different week-by-week.
It sounds like you had an amazingly productive rest day!
I’ve been taking more rest days than usual because I’d much rather be cooking. That fish looks good and so easy! I can see my self making that when I need a quick tasty meal

congrats on the 2 months!! i make sure to take rest days once a week. it’s hard at times but i know my body needs it. that way, i am ready to go the next day!
Congrats on 2 months! I am SO jealous you are at the Phillies game! We are watching it on TV. Hopefully they can do better then the Eagles
