Indian Summer

The past few days, we’ve been experiencing a bit of an Indian summer here in PA. Unlike most people, I’m not complaining. I love the summer, prefer warm weather to cold (or even chilly!) weather, & would always rather be hot than cold! Also, in no time at all we’ll be buried under snow, so I plan on enjoying this little “heat wave” while it lasts. (By Saturday, the high is only 55*… brrr!)
No thank you!
Last night’s dinner was a little reminiscent of something I’d enjoying during the summer, although a meatball sub is perfect for the cooler months as well.
Every Tuesday & Thursday, I take the evening BodyPump class offered by my gym, & afterwards it’s a mad dash to get dinner together before I guzzle down an entire jar of Nutella.
Last night, as soon as I got home, I preheated the oven to 350*, & started warming some pasta sauce on the stove.
To make our meatball subs, I used frozen meatballs, which took about 25 minutes to cook up. As they were doing their thing, I popped a bag of Alexia frozen fries into the oven, & roasted up some cauliflower.
This was my first time roasting cauliflower! It’s not my favorite veggie, so I wanted to see if I could “spruce it up” enough to enjoy it! All I did was cut the veggie into florets, coat with olive oil, & sprinkle with pepper, garlic salt, & some thyme… simple & delicious.
As everything was cooking away (each component of the meal took about 25 minutes), I used the time to get some school work done; multi-tasking at its finest!
When dinner was ready, I was so excited to dig in! (My leftover stuffed pepper that I had for lunch did not hold me over very well.)
I may be holding on to the warm weather, but my placemats are ready for fall!
As soon as the meatballs came off the stove, I plopped them into a hoagie roll & topped them with some shredded mozzarella, which immediately melted into gooey deliciousness!
I was only able to eat 3 meatballs before I had to call it quits. Even Chris commented on how filling this meal was, so I know I did a good job!

I prefer to be cold, because I LOVE putting on lots of blankets and covering up with blankets! I also love drinking hot beverages rather than cold ones!
However, I love summer clothes much more than cold weather clothes–sundresses are the best!
True; curling up under a blanket is pretty awesome!
I wear a dress seriously every day in the summer! I had on like 5 different outfits this morning before I was satisfied! The whole time I was thinking “Gahhh why can’t I just put this flowered dress on?!”
I would TOTALLY rather be hot— I”m cold all the time and my body seriously doesn’t produce its own heat, my blood pressure is too low. I am enjoying the heat for now, the 113* days that lasted for weeks I didn’t appreciate though. When winter comes I’ll be under my electric blanket allllllll the time!

Hi Erica– I just found your blog, and I love it! I’m also an English teacher– I teach composition and creative writing to college kids. My husband and I were actually both teaching at Penn State Altoona, but this past summer, he took a job at the University of Alabama, so now we’re down south. I have to say, I will NOT miss those PA winters– the snow was crazy!! I’m from Louisiana, so I would much rather be hot than cold, haha!

I love meeting fellow English teachers! The winters in PA can be brutal; I’m hoping this year will be a little better since we got pretty much snow the past two years. We definitely deserve a break!
I’ve always wanted to try those Alexia fries. I love their sweet potato fries! Sooo good.
I’d so rather be cold. I grew up on Long Island, NY but now I live in Dallas. And lemme tell ya, it is so painfully brutal here in the summer.
