Experiments with “Boatmeal”

I’ve seen a lot of talk about “boatmeal” (baked oatmeal) on several different blogs, but it was this post on Katie’s blog last week that sold it for me. I finally had to see what all the fuss was about, & luckily, I had all the ingredients on hand to make my own cinnamon roll baked oatmeal.

I followed Katie’s recipe exactly, except for one thing – I totally forgot to add the creamer, juice, or water. I was so mad at myself too, because I had this “sweet cream” coffee creamer I thought would taste amazing!

Regardless, the oatmeal still turned out rather deliciously! Mine looks a little bit different than Katie’s, because I didn’t have a small ramekin to bake mine in. Instead, I used a mini loaf pan (the same I used for the sweet potato meatloaf).

I topped mine with a drizzle of syrup & some brown sugar… yum.

 

I enjoyed this so much, I tried boatmeal again the following morning! I’m not exactly sure which recipe I followed, but you can check out several of Katie’s oatmeal concoctions (& other tasty treats!) on her recipe page.

What I do remember is that this time around, I added in chocolate chips & topped it with some powdered sugar!

I think these make amazing breakfasts, but would also be delicious as desserts, don’t you think?

This evening I’m headed back into work for school orientation night. It’s always hard to go back to work once you’re at home, & the dreary weather we’re experiencing in PA isn’t helping too much. Maybe I’ll make myself some boatmeal to warm up a bit? ;-)

    Girl these look awesome! I’ve only used oatmeal to bake protein cookies and oatmeal muffins, but that’s pretty much eat. These “boatmeals” look awesome!

    Mmmmm! NEVER had baked oatmeal but this sure does look tasty and I’ll be needing to stray from my regular smoothie breakfast and this looks like a good solution!!! Mmmmm!

      Definitely give this a try! I’ve been meaning to bake up a few & pack them as quick grab-and-go breakfasts for the week. I didn’t get around to it this week, but maybe I can make a bunch this weekend!

    I haven’t made boatmeal yet! I love all of the recipes on Katie’s site.. especially all of her different flavored Blondie’s.

    I love that you call it “boatmeal!” That is SO cute! It looks like a very yummy breakfast or dessert idea! I wonder what it would taste like with coconut butter or nutella drizzled on top?!

      Ahhh don’t mention Nutella… I’ve been dunking everything in Nutella recently! That sounds delish, and I’m definitely going to try it!
