Did anyone else find themselves wishing that this Monday were last Monday and we had the day off? I definitely was! Those three day weekends are such a tease.

This was on our meal plan for last week, but I never ended up making it.
The original recipe calls for ground turkey, but I always make it with ground beef. For some reason, I used ground turkey this time and I just wasn’t a fan! I’ll be sticking with beef in the future.
I love this recipe, and I haven’t had it in quite a few weeks. It comes together so quickly (perfect for a post-gym dinner!) and tastes so yummy with a simple side of green beans.
I feel like I’ve been neglecting my slow cooker lately (I guess that tends to happen in the warmer months), and I knew I wanted to break it out for a dinner this week.
I’ve made this recipe from Normal Cooking before, and it turned out great! Just like the last time I made it, I’ll be using boneless, skinless chicken thighs in place of the chicken breasts. I find that the thighs hold up nicely to slow cooking and are definitely more flavorful.
We love an excuse to break out our panini press!
I came across this recipe in the May issue of Cooking Light and it sounds delicious! I’m not following the original recipe exactly, but it’s still hard to beat a warm grilled sandwich. I also picked up some Alexia sweet potato fries to have on the side.
What are your favorite grilled sandwich ingredients? I never thought we’d use our panini press as much as we do; it comes in so handy!
