Hello and Happy Memorial Day!
First things first, let’s backtrack all the way to Thursday… aka the day my car morphed into a golf ball.
We ended up getting a terrible thunderstorm Thursday afternoon with the worst hail I’ve ever seen in my entire life. Every single car in the parking lot at work was pretty much covered in dents from golf ball sized hail. Some people even had their windows shattered! Thankfully, my car is still drivable, but it is definitely an eyesore. You can see some of the damage in these pictures:
The pictures really don’t do the damage justice. Of course all of the body shops are packed, so I think I’ll be waiting a long time until everything gets repaired.
Anyway, on to happier things!
Friday evening kicked off with a dinner date.
I started with a watermelon margarita, which was so good! Chris and I split an appetizer-sized calzone, and I ordered a chopped salad with shrimp as my entree. I was actually so full that I skipped dessert; that almost never happens.
I was up pretty early on Saturday morning, and had a quick breakfast of an English muffin + coffee before heading off to a Pump/Step combo class.
Of course I was hungry once I got home, so it was time for breakfast #2—two pieces of Udi’s gluten-free bread toasted and topped with TJ’s cookie cocoa butter and another cup of coffee.
I spent the rest of my morning/afternoon doing lots of cleaning! I also managed to get our grocery shopping for the week out of the way too.
For dinner on Saturday, Chris and I went to Elevation Burger. I got a kid’s burger (single patty!) in a lettuce wrap topped with cheese and bacon. We also shared an order of fries.
Our next stop was the outlets to check out the MDW sales. I didn’t find anything, but Chris got a pair of sneakers.
Next up, froyo!
My eyes were definitely bigger than my stomach, but I still somehow managed to finish my giant cup!
I woke up Sunday morning pretty hungry for breakfast. The quickest option? Cereal! (Cinnamon Chex is my current favorite.)
After church, Chris and I went to lunch with his parents. Once I was back home, it was time to get to work on some Snickers dip.
This stuff is seriously addicting!
Chris and I ended up going over to his parents’ house for hotdogs and hamburgers and I ate way too much! I ended the night curled up in the fetal position with stomach cramps and nausea… yeah, not fun!
I was feeling better this morning though, and I’ve been trying to lay off the junk food as I apparently got a bit too lax with my eating over the weekend.
And now, a look at this week’s meal plan:
Penne and Meatballs
I know, I know… we have pasta and meatballs all the time! I couldn’t resist because we’ve got a surplus of frozen meatballs; I knew this would make for an inexpensive meal.
I found this recipe in a recent issue of Cooking Light. I’m actually making it tonight for “meatless Monday”!
Another “classic” around our house! Again, I already had ground turkey, so I picked this knowing it wouldn’t be a meal that added much to our grocery budget. I also bought the pre-packaged/pre-chopped bell peppers/onions at the store, which will make this quick dinner come together even faster.
My friend Sara tried this recipe last week and raved about how good it was, so I’m giving it a try. The ingredient list is simple, and it truly does seem like it couldn’t be easier!
I think this week is a pretty good balance of old favorites and some new additions!
