Meal Plan Monday: 3/31

Yay—we made it through Monday! :-)

I’ve only got three meals on this week’s meal plan. I usually cook Sunday-Wednesday night, we will get “fast food” on Thursday (Subway, Moe’s, Chick-fil-A, etc.), and wing it Friday and Saturday. This week, however, Chris had to go into work early on Sunday, so I just made a quick peanut butter and jelly sandwich for myself. Even though I like to cook, I never really mind having an extra night off!

Thai Beef with Noodles

Chris and I both kind of love The Pioneer Woman. We were watching an episode of Ree’s show on Saturday where she cooked up this meal in no time at all. It seems relatively quick and simple, with just a few basic ingredients. Of course, Ree made her marinade from scratch. I found a bottled one with very similar ingredients at Target, so I’m using that to save time (and money, too!). I’ve never made anything with thai noodles before, so fingers crossed this turns out well!

Linguine with Garlicky Kale and White Beans

I came across this recipe in the latest issue of Cooking Light. It sounded too good to pass up, and I love that the ingredients are low cost. Just like I’ve never cooked with thai noodles before, I have never cooked with kale (can you believe it?!). I have a feeling this will make for a good dinner but even better lunch leftovers.

BBQ Chicken Quesadillas

This meal was Cooking Light-inspired. In the latest issue, they have a spread featuring a variety of quesadilla ideas—love that! Chris and I both really like BBQ chicken, but for some reason I never thought to use it as a quesadilla filler. I cooked two large boneless, skinless chicken breasts in the crockpot all day today and shredded them up to use in this recipe later this week (yay for some of the prep work being done!).

      This was my first time making or eating anything thai! Not sure how “authentic” it was, but it was pretty good!

    Yummm, these sound delicious! I have been LOVING all things kale lately! It’s just such a fun green! My favorite way to eat kale is either in salads or as kale chips, but I’ve also been loving putting it in soups and stews lately. It takes longer to wilt down than spinach, but has kind of that same effect.

      It was! I would love to try more of her stuff, but they can sometimes be a little labor intensive and require a lot of dishes!
