Sandwiches for Dinner

Hello friends! Hopefully your work week is going well and passing quickly. (Unless you’re some sort of weirdo who actually prefers work days to weekends… just kidding! 😉 )

Tonight, I’m sharing a new sandwich I created on Monday. I originally called this a quesadilla on my meal plan for the week, but that title doesn’t seem appropriate. I guess I’ll go with panini, since I used our panini maker to “grill” them.

No matter what you call it, this sandwich is quick and easy to make, and doesn’t require too many ingredients. Pair it with a bowl of soup, and dinner is served!


Arugula, Prosciutto, Fig, and Goat Cheese Panini

{Makes 1 sandwich}


  • Whole wheat tortilla
  • About ¾ c. arugula (you don’t want too much since the peppery flavor can be a little overwhelming)
  • 2 slices of prosciutto
  • 2 dried figs, sliced (of course you could also use fresh, but my grocery store didn’t have them)
  • About ¼ c. crumbled goat cheese


  • Heat a panini press or skillet.
  • On half of the tortilla, layer the arugula, prosciutto, figs, and cheese.
  • Fold the tortilla is half and grill until cheese is slightly melted.


I love the flavor combo of this sandwich—it’s salty with just the perfect amount of sweetness to balance everything out.

      Chris is the same way–he would definitely prefer a more “complete” meal, but he is pretty good about “rolling with it” when I make quick meals like this!

      lol me too!!! That was one nice thing about living by myself–if I didn’t feel like making anything for dinner, I could just throw together whatever and be content.

    My husband travels a ton so I frequently do meals like this when its just the kids and I. We actually just threw a grilled cheese dinner party ~ and this combo was one of the options! Delicious! Comfort food is the best :)
