Meal Plan Monday: 2/3

This week is an easy one!

Chris and I will be going out to eat on Wednesday for my birthday, and Friday is usually pizza night, so that knocks out two nights of meal planning/cooking—woohoo! While I usually prefer to make dinner at home—mostly because of the fact that it’s cost-saving—I do love a random week that requires less effort!

Meatball Subs

How delicious are meatball sandwiches? I love mine in a soft hoagie roll, light on the sauce, and a sprinkle of shredded mozzarella!

Crockpot Chicken

I got a new-to-me marinade at the store this week. I plan to cook the chicken + marinade in the crockpot all day, then shred the chicken. I’ve never tried this method before, but I saw a similar “recipe” on Pinterest, so I’m hoping it turns out okay!

Crockpot Beef Stroganoff

I follow this recipe; it’s a good one, but I haven’t made it in a while. This dish is a warm and comforting one—perfect for the cold weather.

For my birthday dinner, we’re going to Austin’s. I love their salads (just a vehicle for me to eat their strawberry dressing!), and I plan to get a giant brownie for dessert!

    I’m with ya on meal planning! I love saving money and knowing we’re eating healthy, wholesome meals but easy weeks with a few nights out are always appreciated. I need to try meatball subs- my husband loves them, but I’ve never made them at home.

      Definitely! I had dinner ready within 15 minutes of getting home from work tonight because of the crockpot–not bad!

    I love just throwing some chicken in the crockpot with a sauce (or sometimes I’ll just throw it in with chicken broth) and letting it cook all day on low. When it comes out it’s so easy to quick and easy to shred! Plus, when I do it plain it allows us to mix it with different sauces all week (BBQ, salsa, buffalo, etc!)
