I hope everyone’s week is off to a good start!
Once again, I’m linking up with Jana and sharing my meal plan for this week.
This is the first week where there is a sense of normalcy again after the holidays. I was definitely ready to get back on track and plan a full week of meals. Chris is helping in the kitchen this week, too.

This is a recipe that Chris found online and wanted to try, so I can’t say I know much about it! I do know that we’re having brown rice and broccoli as our side dishes though.
I’m pretty sure I’ve made this recipe of Courtney’s once before. We’re actually having it for dinner tonight since I’ll be running right from step class to a nail appointment. I like to do “serve yourself”-style dinners on busy nights like tonight!
I had a bunch of meatballs left over from one of our many spaghetti and meatball nights, but I decided to do subs this week for a little bit of a change. I asked Chris if having fries with meatball subs was weird (they just don’t seem to “go” for some reason?), and he assured me it wasn’t, so that’s what we’re having with our sandwiches.
This is by far one of my favorite (quick!) chicken recipes, and I realized this week that I hadn’t made it in a long time. Green beans go so well with this dish, so we’ll have that as a side and I’m thinking some mashed potatoes, too.
