Hello, hello! I hope your week is off to a good start!
Once again, I’m sharing our meal plan for the week and linking up with Jana from Happy Wife, Healthy Life.
I made this for dinner last night and it turned out pretty good and was easy to make. I mentioned in last week’s MPM post (this meal was a carry-over meal from last week!) that I’m not a huge alfredo fan. Even though this sauce was lighter than a typical restaurant alfredo or the jarred variety, it still didn’t leave me feeling too hot afterwards. It tasted great; cream-based pasta sauces just aren’t my favorite, I guess.
It’s been a while since I’ve made these, but the inspiration struck when I realized I had leftover tortillas from last week’s chicken fajitas. This meal is a favorite because it is so cheap and easy! Plus, I remembered to pick up one of my favorite toppings—avocado!
I made this recipe once before, and I was surprised at how good the peppers came out. What I like best about this recipe is that it can be completely prepped the night before. I got the peppers all stuffed and in the crockpot and kept them in the fridge overnight. All that was left to do in the AM was plug in the crockpot and go!
Chicken in a Sack
My friend Sara e-mailed me this recipe last week and raved about how good it was so I decided to give it a try! Plus, it sounds easy to make. It’s a Rachael Ray recipe that Sara made with a few adjustments. I can definitely follow-up and share the recipe once I make it this week!
