Once again, I’m linking up with Jana and sharing my meal plan!
Last week, it was kind of nice to take a break from making a “traditional” meal plan. The Thanksgiving holiday provided a short reprieve from the kitchen, but we’re back to our normal schedule this week. Here’s a look at our menu:

Cheesy Chicken Skillet
Every now and then, I take the super easy route and pick up one of these skillet dinners from Bird’s Eye. All you have to do is dump the entire package into a skillet and let it heat through. To “bulk up” the meal a little bit, we’ll have side salads + dinner rolls.
Spaghetti and Meatballs
Always a crowd-pleaser in this house! I especially like adding this to the meal plan rotation because if I’m having a busy night, this is something Chris can make, too. Side salads and dinner rolls will be making an encore appearance with this meal!
I had been wanting to try this recipe from Courtney since she posted it a few weeks ago. It seems like it comes together pretty quickly, but I’m thinking of trying to adapt it to a crockpot recipe to make it even more effortless.
I had this recipe from Six Sisters’ Stuff pinned for a little while now. I realized when I was meal planning that we hadn’t had Mexican in a little while, and these looked too yummy to pass up! I’m going to make microwave some rice to serve with them as well.
Chris has always been a huge alfredo fan, but I can’t say the same for myself. Heavy/creamy sauces like alfredo always leave me feeling sort of “blah,” but when I received a recipe in my e-mail inbox last week, I decided we’d give it a try since Chris likes it! There’s no protein in the main dish (although you could easily add in some chopped chicken) so I’ll once again be serving salads and rolls to add a little staying power to the meal.
Fettuccine alfredo—yay or nay?
