Happy Monday, friends! I hope your week is off to a good start; only 2 more work days until Thanksgiving… woohoo!
This week’s meal plan is admittedly a little weak; regardless, here it is—
Yes, this is a repeat from last week. Well, not actually a repeat… I never got around to making it, so I popped the salmon in the freezer for this week. I still plan on serving rice + a cucumber salad on the side, as long as the cukes didn’t turn on me! If that’s the case, I’ll substitute whatever other veggie I can find in the fridge or freezer.
Tuesday is going to be a busy day + night. I go right from work to a hair appointment, so I plan to toss some sausages in the crockpot before leaving for work so that they’re ready for whenever Chris and I make it home. I bought some macaroni salad to have on the side; we’re keeping it simple and low-effort.
An oldie, but goodie! Wednesday night will be busy, too, as I’ve got a nail appointment! (I should’ve planned ahead and scheduled these appointments for the weekend… oh well.) I’ll have time to stop at home before I have to head out again, so I plan to make this quick dinner as soon as I get home from work.
Thursday is taken care of with Thanksgiving (we do dinner with my family and Chris’s family, so I definitely don’t go hungry), and Friday will be a “wing-it” night!
