Hey, hey! I hope your week is off to a great start.
We’re in vacation countdown mode around these parts, so I’m sure this week will both fly by and drag on at a snail’s pace. I’ve still got lots to do before we head out to the west coast (best coast) on Saturday, so I’m in a race against the clock.
Admittedly, this week’s meal plan is one of the more pathetic ones I’ve come up with…
…at least I took time to make the graphic look holiday-appropriate! 😉
Tonight, I’m meeting up with my friend, Sara, for dinner, so I (obviously) didn’t plan anything. I figured Thursday night would be a take-out night—between starting the packing process and tending to the trick-or-treaters—which left us needing just three meals. (I guess I’m pretending Friday doesn’t exist for some reason?)
Crockpot Beef Tips
This was a recipe I found on Pinterest (surprise, surprise!). All you do is combine about 2 lbs. beef tips, a packet of brown gravy mix (I got reduced sodium), a can of cream of mushroom soup, and a small can of mushrooms. I was all about the quick and cheap this week!
This is “carry over” from last week. I never got around to making this chicken, but thankfully—and for once in my life!—I remembered to freeze it before it went bad.
I was totally stumped when I was meal planning this week. I’m getting sick of the same ol’, same ol’, but I also didn’t feel like being too ambitious. I purchased a salmon filet at the grocery, and figured I’d hash out what I’m serving with it when the time comes.
On that note, I purchased a bunch of random side dishes and figured I’d just mix-n-match depending on what we’re craving!
There will be no Meal Plan Monday post next week, as I will be stuffing my face with all. the. food. in San Francisco (sourdough bread, here I come!).
