I’m so pleased with myself; this week, I’ve got five dinners on our meal plan! We had grown accustomed to picking up take-out (usually Subway) once per week, but lately we’ve been kicking the habit. (Still working on those October goals…)

Crockpot Baked Potato Soup
To make this, I followed a recipe I got from my mom a while ago. I actually posted it on the blog once before (a looong time ago!), but plan on doing a “recipe re-post” tomorrow—stay tuned, it’s a good one!
I found this recipe on Skinnytaste when I was meal planning this week; I think Skinnytaste might be my new obsession! I actually prepped this last night, so all we have to do tonight (we’re “celebrating” Meatless Monday) is pop it in the oven—love that!
Last week at work, I overheard someone mention that they had leftover sloppy joes for lunch. Well ever since then, I haven’t been able to get them off my mind! I’m sure there are lots of homemade sloppy joe sauce recipes out there, but I’m taking the easy route and using a can of Manwich—I’m a busy/tired/lazy lady.
I’ve also been craving stuffed peppers lately, and when I googled “crockpot stuffed peppers” I was led to this recipe. It seems so easy—you don’t have to cook the ground beef ahead of time—so I hope it lives up to my expectations!
You all have seen this on my meal plans many times before. Thin-sliced chicken breasts + about 1/2 cup plain Greek yogurt + about 1/3 cup parmesan cheese… that’s all! The chicken turns out perfectly when cooked at 350* for 20 minutes.
When’s the last time you had a sloppy joe? I must have been living with my parents; I don’t think I’ve ever made them myself, actually.
