For the first time in forever, tonight’s What I Ate Wednesday will actually feature what I ate today! Normally, I have enough forethought to photograph my meals a day or two in advance, but I waited until the last minute this time around.

Breakfast – Peanut butter Cheerios, coffee with pumpkin syrup and pumpkin creamer
Peanut butter Cheerios was my cereal of choice this week; I forgot how good it is! I used the pumpkin syrup I picked up yesterday, along with some pumpkin creamer, to spice up my regular ol’ breakfast blend coffee.
Oh, and as you can see I added half of a sliced banana to my cereal (I ate the other half on my way to work).
AM Snack – Apple cinnamon Dole fruit crisp
Have you guys ever tried these?! I know I had tried them in the past, but these aren’t a “staple” in our house. However, this week I had a coupon, so I picked them up and man, they’re tastier than I remembered! I heated the fruit up for a few seconds and sprinkled the granola mixture on top… delicious! I only wish it were a bit bigger, because an hour after I ate this, my stomach was grumbling and I ate a granola bar I had stashed at work!
Lunch – Leftover garlicky baked shrimp, blueberry Chobani
This is a recycled picture from when I made this dish a while ago. This was our dinner on Tuesday, so I packed up some leftover brown rice, shrimp, and green beans for today’s lunch. I didn’t snap a picture, but as always, I had a cup of Cho, too.
Pre-dinner Snack – Popcorners
I had a nail appointment after work, so by the time I got home I was starving. I woofed down quite a few white cheddar Popcorners as I was prepping dinner.
Dinner – Pork chop casserole
This turned out to be just okay. Actually, I didn’t even finish my whole portion because I wasn’t too crazy about it (or maybe it was because I filled up on Popcorners?!). It wasn’t terrible, I just don’t think I’ll be making it again… can’t win ‘em all!
Dessert – Turkey Hill pumpkin ice cream
I have no words.
