Hey everyone! How was your Monday? I’m coming down off of a sugar high I was riding all weekend. I need to quit going off the deep-end on the weekends, but I guess that’s a post for another day!
Let’s take a look at this week’s meal plan:

This meal got added to our menu per Chris’s request. He never has to twist my arm to make this though; it’s so delicious! I typically serve this over brown rice, and I picked up some green beans to serve with it as well.
I realized I hadn’t been using my slow cooker much lately, and that simply cannot happen! I bought a Campbell’s Slow Cooker Sauce—Tavern Style Pot Roast—and all you have to do is pour it over the meat! On the side, we’ll be having fingerling potatoes and corn.
This was another meal that Chris requested. I almost forgot about it, which is a shame since it’s so yummy and requires very few ingredients. I always like to have green beans with this chicken—it just seems to go well for some reason!
Whaddaya know, another recipe from Lindsay! Whenever I get “stuck” for ideas when meal planning, I turned to Normal Cooking. I love casseroles for their all-in-one convenience. However, I plan on heeding Lindsay’s warning about the salt level of this recipe… we’ll see how it turns out!
