Happy Monday, friends! Was it a happy Monday? I hope so. I actually don’t mind Mondays too much—it’s always like a fresh start!

Crockpot Sausage Sandwiches (with semi-homemade sauce)
I made this for dinner last night, and Chris and I give them two thumbs up! I plan on sharing the recipe soon, but it’s almost too simple to even qualify as a recipe.
On the side, we had Alexia crinkle cut sweet potato fries.
I found this recipe from Kraft stored in my e-mail. The weather has definitely taken a turn towards the colder side, so I feel like it’s okay to break out the chili recipes.
Since chili is a meal in itself, I just plan on making a few fresh dinner rolls to have on the side.
Ah, I love a good ol’ tried and true recipe. I already chopped up my peppers yesterday while I was doing a little meal prep, so this should come together quickly.

This was another e-mail find and new-to-me recipe for this week.
The theme of this week might as well be “no side dishes necessary,” as this recipe also puts everything together in one dish.
Side dishes are my least favorite thing to make—it always seems like a lot of work for relatively little “pay off”—so I love recipes that can stand on their own.
