Ah, the start of another week!
For our meals this week, I had to think ahead and take care of my meal planning and grocery shopping before we left for our little weekend getaway.
BBQ Pulled Pork Sweet Potatoes with Side Salads
I originally got this idea from Pinterest, and I have made it once before. I’ll make the pulled pork in the crockpot and microwave the sweet potatoes for a quick, healthy meal. We picked up a champagne dressing (on sale at Target!) so I can’t wait to try that on my side salad!
This is one of my favorite recipes from Lindsay. Just like last week, I’m all about the crockpot these days… it’s almost like I forgot how convenient it is or something! I got a box of whole wheat angel hair pasta to make, then I’ll simply scoop a serving of the chicken on top and be good to go.
Taco Bake (<— super old post alert!)
As I was meal planning this week, I realized it had been a while since we had Mexican. I usually opt for black bean enchiladas (easy and cheap!), but figured I’d switch things up for something different. I got roasted garlic and black bean tortilla chips (made by Tostitos) to try, and I can’t wait to see what the flavor adds to the dish!
One protein I want to start incorporating into our dinners more often is turkey. It’s relatively cheap and, when properly prepared and seasoned, pretty delicious. Here are three recipes that are on my radar to try soon:
