I hope you all had a good start to the work week! I was just happy not to oversleep by nearly two hours like last Monday!
Here’s what we’ve got on our dinner menu this week:
This is a recipe that I initially found on Pinterest, and it has become one of my super-easy go-to’s. All you do is mix 1/2 c. sour cream (or plain Greek yogurt, which I usually use if we have it on hand), and 1/4 c. parmesan cheese. Spread the mixture on top of boneless, skinless chicken breasts and bake at 350* for 20-25 minutes… voila! I got green beans (my favorite veggie side dish) to have as well.
We’re breaking out the crockpot twice this week! I love crockpot beef stroganoff, so I’m excited to try this twist from Lindsay (<— one of my favorite recipe blogs!) Just as suggested, I’ll be making egg noodles and serving the stroganoff on top… yum!
Crockpot Roast Beef
This is another “no brainer” recipe. Simply mix together 1 packet each of Ranch dressing mix, Italian dressing mix, and brown gravy mix (I get the reduced sodium) with 1/2 c. water. Pour the mixture on top of a decent size roast and let it cook on low all day. We usually shred the meat up and make sandwiches.
One thing I need to working on improving are my side dishes. I tend to go to the same old things because I rarely feel like putting in the extra effort to make something too complex in addition to our main meal.
